Next Level Soul with Alex Ferrari: A Spirituality & Personal Growth Podcast
Dr. Eben Alexander spent over 25 years as an academic neurosurgeon, including 15 years at the Brigham & Women's Hospital, the Children's Hospital and Harvard Medical School in Boston. Over those years he personally dealt with hundreds of patients suffering from severe alterations in their level of consciousness. Many of those patients were rendered comatose by trauma, brain tumors, ruptured aneurysms, infections, or stroke. He thought he had a very good idea of how the brain generates consciousness, mind and spirit. In the predawn hours of November 10, 2008, he was driven into coma by a rare and mysterious bacterial meningo-encephalitis of unknown cause. He spent a week in coma on a ventilator, his prospects for survival diminishing rapidly. On the seventh day, to the surprise of everyone, he started to awaken. Memories of his life had been completely deleted inside of the coma, yet he awoke with memories of a fantastic odyssey deep into another realm – more real than this earthly one!His older son advised him to write down everything he could remember about his journey, before he read anything about near-death experiences, physics or cosmology. Six weeks later, he completed his initial recording of his remarkable journey, totaling over 20,000 words in length. Then he started reading, and was astonished by the commonalities between his journey and so many others reported throughout all cultures, continents and millennia. His journey brought key insights to the mind-body discussion and to our human understanding of the fundamental nature of reality. His experience clearly revealed that we are conscious in spite of our brain – that, in fact, consciousness is at the root of all existence. His story offers a crucial key to the understanding of reality and human consciousness. It will have a major effect on how we view spirituality, soul and the non-material realm. In analyzing his experience, including the scientific possibilities and grand implications, he envisions a more complete reconciliation of modern science and spirituality as a natural product. He has been blessed with a complete recovery that is inexplicable from the viewpoint of modern Western medicine. His latest book on the subject of consciousness and reality, Living in a Mindful Universe: A Neurosurgeon's Journey into the Heart of Consciousness, co-authored with Karen Newell, will be released in Fall 2017 by Rodale Books. His first book, Proof of Heaven: A Neurosurgeon's Journey into the Afterlife (2012), debuted at #1 on the New York Times Bestseller list and remained in the top ten for over a year. His second book, The Map of Heaven: How Science, Religion and Ordinary People are Proving the Afterlife (2014), explores humankind's spiritual history and the progression of modern science from its birth in the seventeenth century, showing how we forgot, and are now at last remembering, who we really are and what our destiny truly is.His story was featured in a series of peer-reviewed medical articles about near-death experiences (NDEs) in Missouri Medicine(2015), now published as the book The Science of Near-Death Experiences (edited by John C. Hagan III, 2017). It concludes with his chapter, “Near-Death Experiences, The Mind-Body Debate, and The Nature of Reality.”A graduate of the University of North Carolina at Chapel Hill, Dr. Alexander received his medical degree from Duke University School of Medicine in 1980. He taught neurosurgery at Harvard Medical School in Boston for fifteen years, and has performed over 4,000 neurosurgical operations. During his academic career he authored or co-authored over 150 chapters and papers in peer reviewed journals, authored or edited five books on radiosurgery and neurosurgery, and made over 230 presentations at conferences and medical centers around the world.Since Proof of Heaven was released in 2012, he has been a guest on The Dr. Oz Show, Super Soul Sunday with Oprah Winfrey, ABC-TV's 20-20 and Good Morning America, FOX-TV's FOX & Friends, and his story has been featured on the Discovery Channel and the Biography Channel. He has been interviewed for over 400 national and international radio and internet programs and podcasts. His books are available in over 40 countries worldwide, and have been translated into over 30 languages.Since his NDE, Dr. Alexander has dedicated himself to sharing information about near-death experiences and other spiritually-transformative experiences, and what they teach us about consciousness and the nature of reality. He continues to promote further research on the unifying elements of science and spirituality, and together with Karen Newell, regularly teaches others ways to tap into our greater mind and the power of the heart to facilitate enhancement of healing, relationships, creativity, guidance, and more.Enjoy my conversation with Dr. Eben Alexander. This show is part of the Spreaker Prime Network, if you are interested in advertising on this podcast, contact us at https://www.spreaker.com/show/4858435/advertisement

Sue Becker continues her two-part series on The Facts About Fats. In this episode, she talks about the amazing role of essential fatty acids in the body. There are a number of fatty acids found in foods containing oil, but there are only 3 that are considered essential. These 3 fatty acids cannot be made by our bodies, so we must get them from the foods we eat. Sue goes into detail about how these fatty acids are not only essential to proper function of cells, but that we could not exist without them in our bodies.
Samah Dada, recipe developer and founder of the blog Dada Eats, joins us to discuss her new cookbook Dada Eats Love to Cook It: 100 Plant-Based Recipes for Everyone at Your Table. The book features recipes for over 100 meals and treats with "an accidentally plant-based energy" as well as new takes on dishes inspired by her Indian heritage. RECIPE Miso-Tahini-Glazed Roasted Eggplant with Farro Serves 2-4 You would think that I have a strict must-love-eggplant policy with my friends, but I do actually have regard for other people's feelings and taste buds. Though I have encountered a lot of people in my life who have a very ambivalent, bordering on negative, view of eggplant. I've vowed to change that. This recipe is one of my methods for changing minds about eggplant. I roast the eggplant with olive oil so that it becomes soft and tender, which makes for a nice contrast to the farro, a grain I love for its nutty taste and chewy texture. What pulls everything together is the miso-tahini glaze, which is punchy, acidic, sweet, and savory in all the right places. Let's just say that I have a pretty good track record of eggplant converts after they try this one. Roasted Eggplant 1 medium eggplant, cubed 2 tablespoons extra-virgin olive oil Miso-Tahini Glaze 3 tablespoons white miso paste 3 tablespoons tahini 1 tablespoon rice vinegar 1 tablespoon coconut aminos 1 tablespoon coconut sugar 1 tablespoon toasted sesame oil Farro ½ cup farro (see Note) Kosher salt and freshly ground black pepper to taste 1/4 cup fresh parsley, finely chopped, plus extra for garnish To Finish 3 tablespoons sesame seeds Squeeze of fresh lemon juice for serving (optional) Roast the eggplant: Preheat the oven to 425°F. Place the cubed eggplant on a rimmed baking sheet and toss it with the olive oil to coat. Spread the eggplant out in a single layer and roast for 25 to 30 minutes, tossing it halfway through, until the cubes are tender and charring. While the eggplant is roasting, make the Miso-Tahini Glaze: In a small bowl, whisk together the miso, tahini, rice vinegar, coconut aminos, coconut sugar, and sesame oil. Then, to prevent the mixture from seizing, gradually whisk in 2 to 3 tablespoons cold water, tablespoon by tablespoon, stirring after each addition, until the glaze thins and becomes nice and smooth. Cook the farro according to the instructions on the package. After the farro is cooked, transfer it to a large bowl and season it with salt and pepper, and stir in the parsley. Transfer the roasted eggplant to a medium bowl. Reserving 3 tablespoons of the glaze, add the rest to the roasted eggplant, tossing the cubes in the glaze until they are fully coated. Mix the 3 tablespoons of reserved glaze into the farro, and add salt and pepper to taste. Heat a small, dry skillet over medium heat. Once hot, add the sesame seeds and toast them, stirring frequently until they are fragrant and browning slightly, 3 to 5 minutes. Divide the farro among individual plates and place the eggplant cubes on top. Season with salt and garnish with parsley and the toasted sesame seeds. Finish with a squeeze of lemon, if desired. A NOTE ON FARRO: The cooking time depends on what type of farro you buy. Typically, the options are whole farro (cooks in 35 to 40 minutes), semi-pearled farro (25 to 30 minutes), or pearled farro (15 to 20 minutes). Pearled farro has no husk and most of the bran is removed, so it cooks the fastest. Recipe from DADA EATS LOVE TO COOK IT. Copyright © 2021 by Samah Dada. Chaka Khan: Singer, Songwriter, Actor, Activist Chaka Khan was born Yvette Marie Stevens on March 23, 1953 into an artistic, bohemian household in Chicago, Illinois. Bohemian, is not a word used much anymore but it by definition means "socially unconventional, but involved in the arts, or in an artistic way. Chaka/Yvette was the eldest of five kids born to Charles Stevens and Sandra Coleman, Yvette described her father as a beatnik and her mother as "able to do anything." She was raised in the Hyde Park area, which has been called "an island in the middle of the madness" of Chicago's rough South Side housing projects. Her sister Yvonne later became a successful musician in her own right under the name Taka Boom. Her only brother, Mark, who formed the funk group Aurra, also became a successful musician. She has two other sisters, Zaheva Stevens and Tammy McCrary. Yvette was raised as a Catholic, and attributed her love of music to her grandmother, who introduced her to jazz as a child. Yvette soon became a fan of rhythm and blues music as a preteen and at eleven formed a girl group, the Crystalettes, that included her sister Taka. In the late 1960s, Yvette attended several civil rights rallies with her father's second wife, Connie, who was a strong supporter of the movement and joined the Black Panther Party after befriending fellow member, activist and Chicago native Fred Hampton in 1967. Though many think that she was given the name Chaka while in the Panthers, she has made it clear that her name Chaka Adunne Aduffe Hodarhi Karifi was given to her at age 13 by a Yoruba Baba. In 1969, she left the Panthers and dropped out of high school, having attended Calumet High School and Kenwood High School (now Kenwood Academy). Chaka began to perform in small groups around the Chicago area, first performing with Cash McCall's group Lyfe, which included her then-boyfriend Hassan Khan. Chaka and Hassan married in 1970. Chaka was asked to replace Baby Huey of Baby Huey & the Babysitters A great singer and tight band (CLIP) Baby Huey Hard Times After Huey's death in 1970. The group disbanded a year later. While performing in local bands in 1972, Chaka Khan was spotted by two members of a new group called Rufus and soon won her position in the group (replacing rock n roll singer Paulette McWilliams). The group caught the attention of musician Ike Turner who flew them out to Los Angeles to record at his studio Bolic Sound in Inglewood, California. Ike wanted Khan to become an Ikette; she declined stating she was "really happy with Rufus. But Ike's attention was certainly a boost." Early on, Chaka caught the attention of music icon Stevie Wonder, who penned her first smash hit with Rufus, “Tell Me Something Good.” (CLIP). TELL ME SOMETHING GOOD The single from the group’s 1974 platinum-selling album, Rags to Rufus, earned Chaka her first GRAMMY® Award. With Chaka as the group’s dynamic center, Rufus became one of the most popular acts around selling out shows throughout the country and dominating the airwaves with hit after hit with songs such as “You Got the Love,” which Chaka co-wrote (CLIP). YOU GOT THE LOVE “Once You Get Started,” (CLIP). ONCE YOU GET STARTED “Sweet Thing,” (CLIP) SWEET THING “Everlasting Love,” (CLIP). EVERLASTING LOVE “Do You Love What You Feel?” (CLIP). DO YOU LOVE WHAT YOU FEEL The biggie “Ain’t Nobody” Chaka’s second GRAMMY Award-winning song with Rufus. Is up... Rufus and Chaka Khan racked up five RIAA certified gold and platinum albums during their time together. Rufus keyboardist David "Hawk" Wolinski wrote the song around a repeating synthesizer loop backed by a Linn LM-1 drum computer; however, John J. R. Robinson, the band's drummer, played real drums for the recording session. The band did a democratic vote and they decided to include the song in their album repertoire. Once the song was recorded, Warner executives wanted to issue another song as the album's first single. AND Wolinski threatened to give the song to American singer Michael Jackson and American producer Quincy Jones for Jackson's album Thriller, if the song was not the lead-off single. The label relented and "Ain't Nobody" was issued and hit number one on the R&B chart for the week ending October 15, 1983. It was also the song included on the soundtrack album to the 1984 film Breakin'. The song is performed in the key of E♭ minor with a tempo of 104 beats per minute in common time. Khan's vocals span from G♭3 to E♭5 in the song. (SONG) AINT NOBODY This is the Old School Rewind Podcast this week featuring Chaka Khan.. so we just played Ain't Nobody, It was inevitable that a singer with Chaka’s star power would eventually venture out on her own. This week it's Chaka Khan and she has now Paired with the late producer extraordinaire, Arif Mardin (Aretha Franklin, Bette Midler), her catalog grew even more impressive with hits such as “Clouds,” “Papillon,” and “What ‘Cha Gonna Do For Me?” It was during this time that Chaka began pursuing her love of jazz. She and Arif brilliantly re-worked the classic song “Night in Tunisia” with the song’s originator, Dizzy Gillespie, on trumpet. Chaka also recorded an album of jazz standards titled Echoes of an Era, which featured such luminaries as Chick Corea, Stanley Clarke, and Lenny White. Her crowning achievement in jazz was the GRAMMY® Award-winning tune, “Be Bop Medley.” The song’s album, titled Chaka Khan, also won a GRAMMY® for Best Female R&B Vocal Performance. However, anyone else would be winded.. not Chaka as the biggest and best was yet to come. And , the song that made Chaka Khan a household name and propelled her to superstardom the world over was “I Feel For You,” written and first performed by Prince. (Clip) Prince I FEEL FOR YOU This chart-topping, GRAMMY® Award-winning song also made music history. Released in 1984, it was the first R&B song to feature a rap, and rapper, which was the best to ever touch a mic. Grandmaster Melle Mel. Khan's version featured a supporting cast including guitar, drum programming, bass guitar, keyboards and arrangement by Reggie Griffin; bass synthesizer and programming by The System's David Frank using an Oberheim DSX sequencer, which was connected to his Minimoog via CV and gate; and chromatic harmonica playing by Stevie Wonder. The song also uses vocal samples from Wonder's song "Fingertips" (1963). The repetition of Khan's name by Melle Mel at the beginning of the song was a mistake made by producer Arif Mardin, who then decided to keep it.[7] This version of the song sold more than one million copies in the US and UK, and it helped to relaunch Khan's career. The song hit No. 1 on the Cash Box singles chart and peaked at No. 3 on the Billboard Hot 100 chart from the weeks of November 24, 1984 to December 8, 1984.[8] The song remained on the Billboard Hot 100 for 26 weeks and became one of Billboard's five biggest pop songs of the year for 1985. The single reached No. 1 on both the US dance[9] and R&B charts in late 1984, remaining atop both for three weeks each.[10] In addition, the song also reached No. 1 on the UK Singles Chart.[11] While touring with Prince in 1998 in support of her collaborative album, Come 2 My House, Khan and Prince performed "I Feel for You" as a duet. Initially, the foundation focused primarily on public awareness campaigns around the diagnosis, intervention, and available family resources and the search for a cure for autism. Her efforts were particularly aimed at communities of color and other underserved communities, where awareness about this disorder is low. Her work in this area was inspired by her nephew who has autism and who Chaka describes as “gifted and beautiful and so full of life.” She later expanded the mission of the foundation to focus more broadly on women and children at risk. In July 2012, Chaka received the McDonald Corporation’s 365Black Award, honoring her for her leadership of the Chaka Khan Foundation. Chaka also is an entrepreneur. Arran Stephens, Co-Founder and Co-CEO of Nature’s Path Foods Inc.Entrepreneur, artist, writer, ecology advocate, gardener, volunteer and meditation practitioner, Arran Stephens has passionately followed the beat of a distant drummer for seven decades. Born and raised on his family’s farm on Vancouver Island, Arran learned a valuable lesson from his dad: “Always leave the soil better than you found it.” Leaving the Earth better became Arran’s driving ethos – from opening a successful vegetarian restaurant in 1967 to providing wholesome food in what was then a real food desert by creating Lifestream, Canada’s first natural foods supermarket (1971-1981). Arran and Ratana, his wife and partner of 45 years, share a profound commitment to organic agriculture, people and health. Together, from humble roots, they established Nature’s Path Foods in 1985, built on a foundation of social responsibility, sustainability and financial viability.Overcoming the odds, Nature’s Path has blossomed to become North America’s largest organic breakfast foods company with plant operations in Delta BC, Blaine, WA and Sussex WI. In 2012 Arran welcomed Que Pasa Mexican Foods and their delicious stone-ground, organic tortilla chips and salsas into the Nature’s Path family. Despite an age of consolidation and sell-outs, Nature’s Path remains proudly independent, with the next generation of son, daughter and other team leaders in place and to carry on the founders’ passion and mission. "No part of Nature's Path is for sale," is a frequent mantra.Arran served on the Organic Trade Association board during the development of the USDA Organic Rule, was a founding member of the Non-GMO Project and has been an avid supporter of federal and state-level mandatory GMO labeling initiatives. He has been a recipient of many industry awards and accolades including Ernst & Young’s 2002 Entrepreneur of the Year, the Schumacher Sustainability Award, the OTA 2013 Organic Leadership Award for Growing the Organic industry, in addition to being inducted into the New Hope and CHFA Halls of Legends. When not digging in his large organic garden, or the office, Arran lives to educate and bring about positive change through the written word. This week, cookbook authors Brent Ridge and Josh Kilmer-Purcell, known as the reality television duo “The Fabulous Beekman Boys,” charmingly flaunted two long-standing tenants of Last Chance Foods: Don’t sound like "Delicious Dish," and don’t antagonize the farmers. “If people haven’t had a sweet pea before, freshly picked, then they haven’t experienced the true power of the pea,” said Kilmer-Purcell, who admitted after the taping that Last Chance Foods’ listeners could have heard a double entendre in that statement. Ridge quickly followed up with this controversial statement: “A frozen pea is often better than a farmers market pea,” he said. Ridge went on to explain that various studies have report that between 20 percent and 80 percent of the sugar in peas and sweetcorn convert to starch within 24 hours. That’s why blanching them right after being picked and freezing them is the best way to preserve freshness. (It’s necessary to blanch the peas in order to kill an enzyme that would continue to break down the vegetable.) “A pea that’s picked and frozen right away is going to be infinitely better than fresh pea that’s sat around for a day before shelling,” explained Ridge. “Farmers are not going to like me for that, but it’s true.” Of course, the caveat is that a fresh pea picked from a kitchen garden and eaten immediately is best of all. That may not be possible at all this year, said Ridge and Kilmer-Purcell, authors of The Beekman 1802 Heirloom Vegetable Cookbook. They grow vegetables at their farm in Sharon Spring, N.Y., and said that everything has come in late this season, given the cool temperatures. (Photo: Brent Ridge and Josh Kilmer-Purcell/Alec Hemer) “The real danger with peas is that they have such a short growing window,” said Kilmer-Purcell. “Because once the... daytime average temperatures get above 70 degrees, they stop growing. They’re done. They stop producing. So if they don’t start growing soon and start flowering, we may not get any.” Even if their pea plants fail to yield any sweet little green gems this season, the leaves will be edible, and the plants will help enrich the soil. “Peas, like beans, they are nitrogen fixers, so they pull nitrogen from the air,” said Kilmer-Purcell. “They have a beneficial bacteria in their roots that grow nitrogen nodules in them.” That means pea plants serve as good companion plants for nitrogen-needing greens like spinach. “If you ever do grow peas, don’t pull them out at the end of the season,” he added. “Just cut them off and leave the roots in the ground, because that’s where all the nitrogen is.” An important part of the garden, peas weren’t always appreciated in their fresh form. They were traditionally dried and used throughout the winter. “In fact fresh peas were kind of a fad in the time of Louis XIV,” Kilmer-Purcell said. “Nobody had eaten fresh peas before that. There’s a famous French diary where [it was written that] women would go home from these huge feasts, and — at the risk of great indigestion — they would eat peas before bedtime.” Shocking! Below is a recipe for spring pea soup, which is a great way to enjoy fresh peas without risking indigestion. Spring Pea Soup From The Beekman 1802 Heirloom Vegetable Cookbook by Brent Ridge and Josh Kilmer-Purcell (Photo: Sugar snap peas at Beekman 1802/Paulette Tavormina) There's still a little chill in the air when the first peas are ready for picking. This soup is perfect in the spring when young lettuces are around. SERVES 4 2 tablespoons unsalted butter 2 leeks, thinly sliced and well washed 6 cups tender green lettuce leaves, well washed and dried 1/3 cup fresh mint leaves 2 cups shelled fresh green peas (see Tidbit) 3/4 teaspoon coarse (kosher) salt 1/2 teaspoon freshly ground black pepper 2 cups chicken or vegetable broth 1/3 cup heavy cream 2 teaspoons fresh lemon juice In a large saucepan, melt the butter over medium-low heat. Add the leeks and cook, stirring occasionally, for 10 minutes, or until tender. Add the lettuce and mint and cook for 5 minutes, stirring occasionally, until the lettuce is very tender. Stir in the peas, salt, and pepper and stir to combine. Add the broth and bring to a boil. Reduce to a simmer, cover, and cook for 5 minutes, or until the peas are tender and the flavors have blended. Working in 2 batches, transfer the soup to a blender and puree until smooth. Add the cream and lemon juice and blend. Serve hot. TIDBIT: To get 2 cups of shelled peas, you'll need to start with about 2 pounds of peas in the pod, so feel free to use frozen peas here (we'll never tell). Millet is a gluten-free whole grain that tastes sort of like a cross between vanilla and corn. It certainly has a flavor that birds enjoy — much of the millet in this country is used for bird seed. But what’s good for Tweety has long been considered tasty by humans, too. “If you’ve ever seen those yellow, tiny, mustard-seedy grains in birdseed and parrot food, that’s millet,” said Mark Scarbrough, co-author of the book Grain Mains: 101 Surprising and Satisfying Whole Grain Recipes for Every Meal of the Day. “That [association with bird food] gives it a bad rep, which is really unfortunate because it is probably the oldest harvested grain on the planet.” While he pointed out that archaeological research indicates millet was grown in China even before rice, Last Chance Foods host Amy Eddings offered a word of caution on eating too much of the grain, which has been linked in some reports to thyroid problems. Consumed in moderation, however, millet is a healthy, gluten-free alternative to wheat. “It’s also an incredibly high source of calcium, of zinc, of potassium, and B vitamins,” added Scarbrough. “It’s probably got the highest profile of B vitamins of any whole grain.” (Photo: Bruce Weinstein and Mark Scarbrough/Jon Fisher) The grain can also make for a savory, satisfying vegetarian burger. Scarbrough and Grain Mains co-author Bruce Weinstein developed a recipe for a millet burger that incorporates olives, sun-dried tomatoes, capers, and pecorino cheese. “We give it an Italian antipasto bar flavor profile,” Scarbrough said. The first step in enjoying millet, though, is proper selection and storage. He advised smelling millet before buying it — even if it’s in a plastic bag. “Any whole grain you buy, even millet, you should always try to take a whiff, a smell, at the grocery store,” Scarbrough said. “You’re smelling the grains in the grocery store because you don’t want that... rancid, musky, mushroomy, earthy, wangy smell.” Once home, maintain freshness by keeping it in your freezer. “That is the best place to keep millet and teff and some of the ones that go rancid really fast,” he added. Try and Weinstein and Scarbrough’s recipe for Millet Burgers with Olives, Sun-Dried Tomatoes, and Pecorino. That’s below. A millet field in Germany (Armin Vogel/flickr) Millet Burgers with Olives, Sun-Dried Tomatoes, and PecorinoServes 6Active time: 15 minutes Total time: 55 minutes 3 cups water 1 cup millet 10 chopped dry-pack sun-dried tomatoes 1 garlic clove 1/4 cup pine nuts 1/3 cup pitted green olives, chopped 1/4 cup packed grated Pecorino Romano or Parmigiano-Reggiano 4 large jarred caper berries, minced 2 teaspoons minced fresh oregano leaves or 1 teaspoon dried oregano 2 teaspoons minced fresh marjoram leaves or 1 teaspoon dried marjoram 2 tablespoons unsalted butter 2 tablespoons olive oil 1. Combine the 3 cups water and the millet in a medium saucepan and bring to a boil over high heat. Cover, reduce the heat to low, and simmer slowly until it's like a thick, coarse, hot breakfast cereal, about 30 minutes. Uncover and stir well to incorporate any last bits of water. Scrape the millet into a large bowl and cool for 10 minutes. 2. Meanwhile, put the sun-dried tomatoes and garlic in a small heatproof bowl. Cover with boiling water and steep for 10 minutes. 3. Place the pine nuts in a dry medium skillet set over medium-low heat. Toast until lightly browned and fragrant, about 5 minutes, stirring often. Pour them into the bowl with the millet. 4. Drain the sun-dried tomatoes and garlic in a fine-mesh sieve and add them to the bowl with the millet. Add the olives, cheese, caper berries, oregano, and marjoram. Stir well, mashing the ingredients together. You want texture here, bits of this and that scattered throughout the burgers, not a baby-food puree. Use dampened hands to form the mixture into 6 round, even patties. 5. Melt the butter in the olive oil over medium heat in a large skillet, preferably nonstick. Slip the patties into the skillet and cook until mottled brown and somewhat crisp, about 4 minutes. Flip them and continue cooking until set throughout, mottled brown on the other side, and now nicely crisp, about 4 more minutes. If your skillet isn't large enough to hold all 6 patties at once, work in two batches, using 1 tablespoon olive oil and 1 tablespoon unsalted butter for each batch. TESTERS' NOTES • Here, we've used an Italian palette to balance the aromatic millet. Note that the recipe calls for the larger, oblong caper berries, not capers. • The timing for cooked millet is a bit dodgy since the grains are notorious for picking up and holding ambient humidity--as well as releasing it in a dry environment. Don't stand on ceremony: Lift the lid and check the millet as it cooks, adding more water as necessary. You're looking for a crunchy texture that's nonetheless tender to the bite. • These patties would be a treat on whole wheat buns with a little purchased caponata as well as thinly sliced red onion and crunchy lettuce. You could also slice the cooked patties into bite-sized bits and toss them in a large, Italian-style, chopped salad, dressed with a creamy vinaigrette. • These patties don't reheat as well as some of the others, although they do make great late-night snacks right from the fridge, cut into small pieces and dipped in deli mustard. Increasing attention is being paid to specific things we can do to help our students learn to think critically at the college level. In collaboration with colleagues, Dr. Hirsh-Pasek has developed a system for both instructional design and assessment backed up by her own research in learning development. Dr. Hirsh-Pasek believes that “Memorizing content and regurgitating it will never help students become scientists themselves” and uses her system in her own teaching. The system represents a new way of thinking about learning that is based in science, and asks us to reexamine ourselves, our classes, and student learning across a number of dimensions. These dimensions are “the 6 C’s” of powerful learning: Collaboration, Communication, Content, Critical Thinking, Creative Innovation, and Confidence. In her presentation, Dr. Hirsh-Pasek will explore how she designs her own instruction around the 6 C’s and measures students’ progress across them. Presented on April 20th, 2012. Bio: Kathryn Hirsh-Pasek is the Stanley and Debra Lefkowitz Professor in the Department of Psychology at Temple University where she serves as Director of the Infant Language Laboratory. She is a Fellow of the American Psychological Association and the American Psychological Society. Her book, Einstein Never used Flashcards: How children really learn and why they need to play more and memorize less, (Rodale Books) won the prestigious Books for Better Life Award as the best psychology book in 2003. Kathy has a strong interest in bridging the gap between research and application. Recorded April 20th, 2012.

Matt Long served as a New York City firefighter and was at the World Trade Center on 9/11. In December 2005, while biking to work during New York City's transit strike, he was struck by a charter bus making an illegal turn that left him with debilitating injuries. His odds for survival were 1% according to doctors. After months in the hospital and 40 surgeries, he did survive. Through an exhausting regimen of physical therapy and hard-core training, Long re-built his badly mangled body to the point where he ran the New York City Marathon in 2008, three years after the accident. In 2008, Matt Long founded the "I Will Foundation", a non-profit organization established to help people overcome adversity and challenges caused by illness or traumatic injury. Long has written about his experiences in his book The Long Run, published by Rodale Books.
