People with high uric acid levels have an increased risk of dementia and Alzheimer's.  There's a relationship between these diseases and uric acid.  Uric acid directly leads to insulin resistance.  [19:30] Your Body Is Retaining Uric Acid As A Survival Mechanism   We tend to retain uric acid. Our uric acid levels can be higher as a survival mechanism, thanks to our primate ancestors. We don't hibernate for six months. Therefore, we don't need to be storing this fat for the winter that never comes.  88% of American adults are metabolically unhealthy. Getting Covid is associated with a 40 to 60% increased risk of type two diabetes. Individuals with higher uric acid levels have a higher risk of dying from Covid.  [25:10] Your Body Can't Handle More Than Five Grams of Fructose At A Time Your body can handle some fructose, about five grams at a time.  When your body is presented with high levels of fructose, it overwhelms what the body can do.  When fructose is delivered in the context of fiber, it slows the absorption. So, it's better to eat an apple than drink apple juice.  Vitamin C aids in uric acid excretion.  The most common way to overdo fructose consumption is by drinking fruit juice.  A 12-ounce glass of orange juice might have 30 grams of sugar. There's no way the body will be able to deal with that appropriately.  [35:30] Tart Cherries As A Remedy For Gout and Lowering Uric Acid Levels  Tart cherries have been researched for decades. Originally, tart cherries have been looked upon as a remedy for gout.  It has been noted that people who ate cherries would have fewer gout flare-ups.  Tart cherries are pretty darn effective in lowering uric acid levels.  [36:40] The Health Benefits of Drinking Coffee  Drinking coffee is associated with a dramatically lowered risk of Alzheimer's. Coffee is also associated with lower uric acid levels.  Plus, coffee reduces inflammation, upregulates antioxidant function, and improves detoxification in the body.  Also, coffee helps us grow new brain cells, no matter our age.  [41:45] The Relationship Between Animal-Based Protein and The Role of Uric Acid Fiber is so essential for human health. Most of Dr. Perlmutter's food is plant-based.  Regarding our uric acid story, certain meats or animal products are worse than others. Organ meats, sardines, anchovies, and scallops can raise your uric acid levels.  The most significant issues for uric acid are fructose, purines, and alcohol.  [48:20] Should I Follow A Ketogenic Lifestyle If I Have Gout Attacks?  The most significant player in gout is fructose.  When you research how to fix gout, there will be no talk about removing sugar or fructose from your diet.  The human requirement for sugar in our diets is zero grams per day.  We subsidize the growth of corn from which high fructose corn syrup comes from. We are supporting the diseases that are sucking up our healthcare resources. Diseases are significant money makers for the healthcare industry.  It's time we start thinking about prevention.  [52:25] What Role Does Mental-Emotional Stress Play With Uric Acid Levels? When we are experiencing stress, our ability to make rational, forward-thinking decisions is compromised. When your decision-making is compromised, you won't be making good lifestyle choices.  Therefore, under stress, you will eat more foods that have sugar.  Eventually, you will raise uric acid levels and feed the flame of poor metabolic health. We discuss its pivotal role in your health and the metabolic diseases that are devastating humanity, and why we should all become aware of our uric acid level, and why and how to lower it. People with high uric acid levels have an increased risk of dementia and Alzheimer's.  There's a relationship between these diseases and uric acid.  Uric acid directly leads to insulin resistance.  [19:30] Your Body Is Retaining Uric Acid As A Survival Mechanism   We tend to retain uric acid. Our uric acid levels can be higher as a survival mechanism, thanks to our primate ancestors. We don't hibernate for six months. Therefore, we don't need to be storing this fat for the winter that never comes.  88% of American adults are metabolically unhealthy. Getting Covid is associated with a 40 to 60% increased risk of type two diabetes. Individuals with higher uric acid levels have a higher risk of dying from Covid.  [25:10] Your Body Can't Handle More Than Five Grams of Fructose At A Time Your body can handle some fructose, about five grams at a time.  When your body is presented with high levels of fructose, it overwhelms what the body can do.  When fructose is delivered in the context of fiber, it slows the absorption. So, it's better to eat an apple than drink apple juice.  Vitamin C aids in uric acid excretion.  The most common way to overdo fructose consumption is by drinking fruit juice.  A 12-ounce glass of orange juice might have 30 grams of sugar. There's no way the body will be able to deal with that appropriately.  [35:30] Tart Cherries As A Remedy For Gout and Lowering Uric Acid Levels  Tart cherries have been researched for decades. Originally, tart cherries have been looked upon as a remedy for gout.  It has been noted that people who ate cherries would have fewer gout flare-ups.  Tart cherries are pretty darn effective in lowering uric acid levels.  [36:40] The Health Benefits of Drinking Coffee  Drinking coffee is associated with a dramatically lowered risk of Alzheimer's. Coffee is also associated with lower uric acid levels.  Plus, coffee reduces inflammation, upregulates antioxidant function, and improves detoxification in the body.  Also, coffee helps us grow new brain cells, no matter our age.  [41:45] The Relationship Between Animal-Based Protein and The Role of Uric Acid Fiber is so essential for human health. Most of Dr. Perlmutter's food is plant-based.  Regarding our uric acid story, certain meats or animal products are worse than others. Organ meats, sardines, anchovies, and scallops can raise your uric acid levels.  The most significant issues for uric acid are fructose, purines, and alcohol.  [48:20] Should I Follow A Ketogenic Lifestyle If I Have Gout Attacks?  The most significant player in gout is fructose.  When you research how to fix gout, there will be no talk about removing sugar or fructose from your diet.  The human requirement for sugar in our diets is zero grams per day.  We subsidize the growth of corn from which high fructose corn syrup comes from. We are supporting the diseases that are sucking up our healthcare resources. Diseases are significant money makers for the healthcare industry.  It's time we start thinking about prevention.  [52:25] What Role Does Mental-Emotional Stress Play With Uric Acid Levels? When we are experiencing stress, our ability to make rational, forward-thinking decisions is compromised. When your decision-making is compromised, you won't be making good lifestyle choices.  Therefore, under stress, you will eat more foods that have sugar.  Eventually, you will raise uric acid levels and feed the flame of poor metabolic health. Something I learned in my Kabbalah class is when you focus on darkness, you attract more darkness. When you focus on the light, you get more light. Today we catch up with Whitney and Ash again. Today we try recording in the car for better acoustics, but it was a bit of a wash. Regardless, we talk about what is going well and not so well for the ladies. The last half of the show we talk about type 2 diabetes and how diet can play a role in mitigating the symptoms, and in some cases even reverse it. When we catch up with Ash, she tells us about her birthday plans. She chose to go off plan and eat the foods she normally would. It did not seem to affect her too much. On the other hand, when we caught up with Whit, the previous she had chicken Flautas, and a soda. For her, the cheat not only made her stomach upset, she gained weight, and it also caused her to have a narcoleptic pull, so bad that she needed a nap before she was ready to record the podcast. Whit asked again about poop again. We discuss the possibility of these bathroom episodes may be caused by your gut flora being repopulated. When you change your diet, your gut flora changes with it. So, the idea is when you go from the SAD way of eating to a low-carb, paleo or keto style of eating your gut is throwing away the unneeded gut bugs to adapt with the new environment. The same goes when you go from a keto, heavy in plants and fiber to a carnivore keto approach. The gut bugs that were there to digest the fiber are no longer needed, nor are they being fed. So this die-off period can result in gastric distress, but once all the old gut bugs die off you should be right as rain. I also touch on how feeding different gut flora may help with ADHD, Autism and other neurological dysfunctions. The book Brain Maker by Dr. David Perlmutter goes a deep dive into the topic of gut flora and health. I mention that the book is Grain Brain, I misspoke, that is also a book by him, however, it is not the one I was referring to. After we move on from that topic, I give you the recipe for my high-fat cheesecake. It is super yummy. Here is a link to the recipe. The soda Whit mentioned is Bai, she enjoys it, and it keeps her soda cravings at bay. We also talk about fasting, if you ever choose to fast, make sure you are keeping hydrated and do not skip on the electrolytes! They are key. These are the electrolytes I use. If you do not have electrolytes, bone broth is also great to help you recoup electrolytes. Now we move on to type 2 diabetes. Type 2 diabetes happens when we become resistant to insulin. The high insulin comes from an excess amount to glucose in the bloodstream. Because too much glucose can be toxic. The problem is that, much like with alcohol, or caffeine, we can build up a tolerance to insulin. This means that as we intake more carbs/sugar (glucose) than our muscles and blood cam use insulin needs to come in and usher it away. As time goes by more and more insulin is needed to usher away the same amount of glucose. Eventually, you become so resistant (tolerant) to the insulin that you cannot make what you need, this is where insulin injections come in. The sad irony is that you can fix this by cutting the carbs, and sugar. Eventually, you can heal your resistance. In some cases, not fully, but it can become manageable. There is hope. You can fix yourself. I also reference the Virta Health Studies, this is the link to the page where you can find the study I referenced, as well as all other the studies they have published, showing how effective well-formulated ketogenic diet can be. We also address a Vegan approach to a keto diet. Inflammation is what causes cardiovascular disease. Reduce processed foods, sugar, and carbohydrates. You definitely won't want to miss out on that!   The Grain Brain Lifestyle https://www.youtube.com/watch?v=mxnRwAlGC-o   The Root of Inflammation: The Brain and Gut Connection   "The gut controls inflammation and inflammation is what we have to control as it relates to the brain and the brain's destiny." - Dr. David Perlmutter Inflammation is caused by what happens in the gut. When various bacteria gets through a leaky gut, they can stimulate various immune cells to secrete chemicals which leads to inflammation. Because of poor gut health and inflammation, it can greatly harm the brain. Besides food, there are many other factors that affect the gut and brain including: Bacteria Medications Environment Toxins Lack of Sleep Stress Little Exercise All of these play an important role in the gut's health and it can explain a lot of different factors such as: Poor Immune System Diabetes Celiac Disease Autism ADHD Adult Obesity   The Problem with The Standard American Diet Before we became farmers, we never ate wheat, carbs, or refined sugar. But then 10,000 years ago, we started to cultivate grain and it's just been a couple of hundred of years since we began to refine sugar. These have been part of the most dramatic events that have affected the human body in the course of mankind thus far.  Since we've introduced processed foods and sugary drinks into our diets, we've noticeably become much sicker. There was never a noted case of dementia until the early 1900s and Inuits who lived on fat such as whale blubber never had a case of cardiovascular disease until carbohydrates were introduced to them. Even people who have slightly elevated blood sugar can experience higher levels inflammatory chemicals in the body which could lead to a person developing a disease should they eat foods with gluten or excess amounts of sugar.   Artificial Sweeteners and Obesity https://www.youtube.com/watch?v=fYCSSHkD8SA   Why Fat Is Good For Us   "Fat is your friend. Fat can turn off various enzymes that would otherwise make your body think that it's starving and store fat. That's what carbohydrates do by activating insulin. Insulin tells your body that winter is coming so it should make fat by increasing its intake of carbs and sugar. This, more than anything, is why so many Americans are obese." - Dr. David Perlmutter   Fat is a powerful and efficient fuel source. How? The brain alone is 60% fat and needs fatty foods to survive. Therefore, the more healthy fats we eat like coconut oil, salmon, and avocados, the healthier the brain, gut, and rest of our bodies will be. To live healthy and ward of diseases like dementia and Alzheimer's, we should lower our carbohydrate intake, eat healthy fats, and exercise. Please leave us a review at http://openskyfitness.com/review   The Benefits of Sugar Substitutes Even though all types of sugar are readily available to us, that doesn't mean they're actually okay to consume. When you think about it, we weren't even designed to consume sugar and processed foods. Our ancestors didn't have candy bars, ice cream, or diet soda on hand. The only sugar that was available to them were fruits like dates or honey. On today's episode, we're sharing with you why natural sugar is a much better substitute for regular table sugar and alternative sugars. However, we're not advocating that you eat all the natural sugar that you want whenever you want. Rather, we hope that you use this knowledge to know that their are better, whole food sugar substitutes out there that you can consume whenever you want something sweet.   "We're not designed to be consuming sweet things all the time. So if every drink or food that you consume has to have some sweetness, there's an issue there. You're probably over-sensitized to sugar." - Rob Dionne   In this episode, we dive deep into each type of sugar substitute, why or why not they're good substitutes, the latest scientific studies and more.  Substitutes for Table Sugar   "The FDA just allowed big food and sugar companies to label high fructose corn syrup as natural sweetener." - Rob Dionne   Sugar is a 1:1 ratio combination of fructose and glucose. While glucose is good for your body, fructose is the problem. In addition, more and more fructose is being added to high fructose syrup and it's hidden under the label, natural sweetener.    Rather than relying on product marketing and ingredient labels to tell you whether or not something is healthy, we hope the knowledge that we're sharing with you in this episode will help you make the best choices possible for your health. Several Substitutes for Table Sugar Include: Natural Sugar  Sugar Alcohols Artificial Sweeteners    Natural Sugar Substitutes Natural sugar substitutes include: Stevia Raw honey Natural maple syrup Molasses Dates Date sugar Coconut sugar Sucanat Pure Glucose and Pure Dextrose Agave   "We're not saying, 'Go on and have as much of these natural sugars as you want. We're saying these are treats and if you want something sweet and they're better replacements than table sugar. They're not a daily ingredient and you want to be careful with how much you use because they will change your insulin levels and too much will lead to weight gain." - Devon Dionne    Stevia Stevia is a plant from Paraguay that has very sweet leaves. There are two types - white powder and green powder. White powder is highly processed and green powder is less processed, but more bitter.  Stevia is often highly genetically modified so you should look for one that is Organic and non-GMO. Stevia has a lot of anti-oxidants, but is 300x sweeter than sugar. You probably don't want to bake with it unless the recipe is Stevia specific. It's great for people who have diabetes and has a lot of anti-diabetic properties to help blood sugar.    Raw Honey   "The thing about honey, maple syrup, and other natural sugars is that they are whole foods. Specifically, honey is a  wonderful whole, full food to consume." - Devon Dionne   Raw honey has so many antibacterial and anti-fungal properties that can help boost your immunity. It helps improve brain health and is free from radicals. Plus, it's great for healing herpes on lips, dandruff in your hair, for acid reflux, as a moisturizer, and it can create melatonin in your body. Just take a teaspoon of honey before you go to bed and it will help you sleep better. Pus, that it can act like a vaccine for you and your allergies by eating honey that has been made from local bees. In addition, it can be used as a cough syrup to help inflammation and alleviate coughs as it coats the throat.      Natural Maple Syrup Natural maple syrup doesn't have as many health benefits as honey, but has some nutrients in it such as: Zinc Magnesium Potassium Calcium Plus it contains other electrolytes that your body needs to replenish after a workout. You can even add some natural maple syrup into your post-workout drinks, tea, or coffee for as sweet boost. Always look for products that are darker and labeled as grade B or C because they have more anti-oxidants and are less processed compared to lighter or grade A products.    Molasses Molasses is refined table sugar and because of this process, it's a lot more nutrient dense and has tons of vitamins including: Manganese Magnesium Potassium Iron Calcium   Dates Dates are packed with tons of good glucose and nutrients such as: Manganese Magnesium Potassium B6 vitamins It's good to help balance electrolytes and is high in fiber. However, it's also very high in sugar so you don't want to eat a ton at once.  Date sugar can be good for baking, but it doesn't melt well. So, it's ideal for baking a cake, but not as the frosting.   Coconut Sugar Coconut sugar is half the gylcemic index of sugar so it's an excellent substitute for table sugar. In fact, both have a 1:1 ratio. It's really ideal for people who are pre-diabetic or are diabetic.   Sucanat Sucanat is pure dried sugar cane. It has more molasses than brown sugar, but  it is still not as moist. Even though it's less processed and better than white sugar, it's still not necessarily the healthiest choice.   Pure Glucose and Pure Dextrose Pure glucose and pure dextrose are the same thing. They have the sweetness of sugar, but no fructose to negatively affect the body. It's not a whole food like dates, raw honey, or natural maple syrup, but it's still an option. It's not low on the gylcemic index and it will spike your insulin levels, but it' doesn't have the same negative affects that table sugar does. Some forms of pure glucose and pure dextrose include: brown rice syrup glucose powder multadextrose Glucose powder and multradextrose can be added to a protein shake after a workout to help gain mass and add carbs. You can also cook with both for a 1:1 ratio.   Agave Agave was a huge fad and has practically zero benefits. In fact, it has more fructose than fructose corn syrup! It's incredibly highly processed even though it derives from a natural plant. For a better sugar substitute, you can easily switch it out with raw honey.    Sugar Alcohols Sugar alcohols are derived from a natural source such as a wood or a root of a plant. They can be more sweet than sugar or almost as sweet as sugar, but they have less carbs and calories than sugar. Sugar alcohols are good for diabetics and are more natural than artificial sweeteners. Especially if you're following either a  Ketogenic or low-carb Paleo diet and trying to lose weight, sugar alcohols can be a really good alternative to sugar when you want something sweet from time to time. However, they're not completely calorie or carb free so you should keep that in mind. Even though sugar alcohols are a good alternative, they're not whole foods and so they're not nutrient dense meaning they lack a lot of vitamins and minerals.    A list of sugar alcohols include: Sorbitol Xylitol Maltitol Lactitol Mannitol Erythritol   Xylitol is being looked at as a possible medicine to help prevent cavities and promote bone growth. It could be a possible treatment for osteoporosis in the future. In general, sugar alcohols can be hard on the gut. If you're following a FODMAP Diet, you don't want to consume any because those are the carbs you're trying to stay away from in the diet.    Sugar alcohols haven't been around long enough for us to really understand what the long-term side effects will be on anyone. However, the follow side effects are common, even in gum and mints that list sugar alcohols as ingredients: Bloating Flatulence Diarrhea Fermentation in the gut   Artificial Sweeteners   "Biologically, we're not designed to digest diet sodas and processed foods." - Rob Dionne   Artificial sweeteners are man-made sweeteners that you see in little sugar packets at a cafe or in the kitchen at your office. However, the fact is that the gut has everything to do with how our brains function as we grow older. Neurologist and New York Times Best Selling Author, Dr. David Perlmutter has witnessed the damaging effects that a poor diet can have on our brains. Today is perfect timing with the launch of his new book, The Grain Brain Whole Life Plan, as he shares why we are vulnerable to develop brain degenerative disease and how we can take matters into our own hands in order to live long, healthy lives with a bright mind that is free of illness.   Make the Choice to Have a Healthy Brain Even if a relative of yours was diagnosed with a brain degenerative disease such as Alzheimer's, you have the amazing opportunity to make lifestyle choices to ensure your brain's health. Factors such as sleep, nutrition, stress levels, and exercise can impact your health, but you can also take advantage of them to improve your wellness and lower the chances of brain decline.   Connecting Wellness And Gut Health   "It's a bit humbling to recognize that mood is regulated by our gut. Not only through the process of controlling inflammation, which is a cornerstone player in depression, but that around 90% of our levels of dopamine and serotonin are not manufactured in the brain. They're mostly manufactured in the gut." - Dr. David Perlmutter     If the gut is leaky and we lack serotonin, it can be linked to feelings of depression. In a study with probiotic yogurt, researchers found a dramatic change in brain function and mood in the test subjects that ate the yogurt compared to those who did not.   Build a Healthy Gut At this moment, there is a diverse community of healthy, gut bacteria living inside of us. If any harm comes our gut's way, it can increase the chances of having a leaky gut. This leaky gut can lead to inflammation and degenerative diseases including: Alzheimer's Parkinson's Diabetes Multiple Sclerosis Cancer The right way to eat food, is to focus on following a diet that helps reduce the chance of a leaky gut and inflammation from happening inside the body.   Do You Have a Leaky Gut? In today's world, we should assume that it is likely that we all have somewhat of a leaky gut. We would have to take a test or participate in a study to know for sure by having an LPS level done in a lab. There's a higher chance that you have a leaky gut if you have an inflammatory condition such as: Depression Early onset Parkinson's Alzheimer's Joint issues Skin inflammation Autism What can you do to heal your leaky gut? To help heal your gut, remove any offensive agents that may be harming it such as any overuse of: Antibiotics GMOs Drinking chlorinated water Artificial sugars and sweeteners Acid blocking drugs Proton pump inhibitors Non-steroid and anti-inflammatory drugs Stress To heal our gut, we need to stimulate and increase the diversity of the organisms that live inside of the gut by exercising and eating foods that are rich in pre-biotic fiber that helps nurture our gut bacteria: Mexican yam/ jicamo Onion Garlic Leek Dandelion greens Kimchi Kobucha Yogurt Fermented vegetables   The Truth About Sugar and Gluten   "Inflammation caused by sugar consumption can lead to diabetes and quadruples your chances for Alzheimer's Disease." - Dr. David Perlmutter   For decades, we've been told that gluten and sugar is good for our health and that fat is bad. However, recent research has shown that this is the exact opposite. Healthy fat is good for both the body and brain function, but gluten and sugar (including artificial sugar and sweeteners) can cause our insulin levels to spike which leads to inflammation in the body. In fact, according to Dr. Perlmutter, artificial sweeteners were created to help people control the amount of sugars in their diet, but still be able to taste something sweet. Unfortunately, artificial sugars and sweeteners can dramatically increase a person's risk for obesity and diabetes. Take your health into your own hands by making good choices. Eat healthy and avoid any sugary drinks, high gluten foods, and anything labeled "sugar free" or "contains artificial sugars."   The Best Sources of Healthy Fat There's a lot of taboo hanging around the words, "fat" and "fatty food." However, healthy sources of fat are great for our bodies and important for our brain's health. According to Dr. Perlmutter, the brain is already made up of a lot of saturated fat and even human breast milk is 50% saturated fat. If you want to ensure that you follow a healthy diet, use the Ketogenic and Mediterranean diets as a good model to follow. The best sources of healthy fats include: Extra virgin olive oil (organic) Fatty fish with DHA Nuts Seeds Avocado Grass-fed and free-range meat Olive oil particularly is good source of polyphenols that act as antioxidants and nurture the gut bacteria. This source of healthy fat provides both mono and unsaturated fats for our brain cell building blacks. When you follow a Ketogenic or Mediterranean based diet, but add extra amounts of olive or cocnut oil, your cognitive function can improve dramatically.   A Diet to Help Prevent Alzheimer's Disease To better understand your body and gene makeup, there are numerous services available from companies that offer biometrics tests including: Wellness FX 23andMe Promethease The sooner you better understand your genes and if there is a chance for you to have an inflammatory disease, the sooner you can take action to fight against it. Depending on our dietary fat composition, there is a risk of dementia or Alzheimer's Disease, but it can be handled by following a diet that includes food that is high in healthy fats. However, we should avoid canola oil, vegetable oil, corn oil and other modified oils in our diets. These are the unhealthy oils that can harm our body and brain function.   Build a Healthy Brain with Aerobics If you want to build a healthy brain, change your diet, but also increase the amount of aerobic exercise. Working out helps to turn on BDNF (Brain-derived neurotrophic factor) which serves as a growth hormone for the brain and helps increase the number of memory cells throughout our lifetime. People who exercise regularly can reduce their chances for Alzheimer's Disease by 50%! If you’re unaware of David, David is a board-certified neurologist and a fellow of the American College of Nutrition. I almost didn’t get my words out there. He’s been interviewed by many national syndicated radios and television programs, including Larry King Live, CNN, Fox News, Fox and Friends, the Today’s Show. He’s been on Oprah, Dr. Oz, the CBS Early Show. He is actually medical advisor to the Dr. Oz Show. Yes, we were very grateful for David to come on and give up an hour of his time and share his absolute wealth of knowledge with us today. He’s written a couple of awesome books in Grain Brain. How are you? Guy:Our fantastic guest today is Dr. David Perlmutter. David, welcome to the show. David:I’m delighted to be here, gentlemen. Guy:It’s fantastic. We’ve been following your work for some time now and be able to expose us to the Aussie audience, I’m very excited about. With that mind, would you mind, for our listeners if they haven’t been exposed to your work before, just sharing a little bit about yourself and what you do? David:I’d be delighted. I’m a brain specialist. I’m a neurologist, and that probably doesn’t explain what I do. I’m very much involved in various lifestyle factors as they affect the brain, as they affect human physiology, and really have begun exploring well beyond the brain, [00:04:00] what are we doing to ourselves in terms of the foods that we eat, both positive and negative? More recently, how are our food choices and other lifestyle choices affecting the microbiome, affecting the 100 trillion organisms that live within us because we now recognize that those organisms are playing a pivotal role in terms of determining whether we are healthy or not. That’s pretty much in a nutshell what I do. Guy:There you go. Stuart:Fantastic. We first heard about you, David, when you wrote the book, Grain Brain which was fantastic. For me, I think it was important because we heard a lot of stories and press about grains and how they’re making us fat and they’re ruining our health. Other ways made the connection of it’s grains … I’m okay with grains. I don’t get any gut ache. I don’t get any gastrointestinal issues, but I never thought about it from a brain perspective. I just wondered if you could share just a little bit about why you wrote Grain Brain, what inspired you to write it? David:Stuart, the real impetus behind Grain Brain was for the very first time, I thought it was critical for a brain specialist to take a position of prevention, of looking at the idea that these devastating brain conditions that I’m dealing with on a daily basis, autistic children, adults with Alzheimer’s, Parkinson’s, MS, you name it, that some of these issues are preventable, and that really flies in the face of pretty much mainstream doctrine. It is going against the grain, if you will which it seems to fit. It became very clear to me that our best peer-reviewed, well-respected literature [00:06:00] has been publishing information not only about gluten but about more generally, carbohydrates and sugar for a couple of decades, and no one has paid any attention. It’s been published, but I really found that somebody needed to step forward and make that information known to the general public. I began implementing these practices in my clinical practice in treating patients day to day and began seeing really remarkable results. That is what got behind me writing the book, Grain Brain, really exploring how sugar, carbohydrates and gluten are absolutely toxic for the brain. Ultimately that book was translated into 27 languages and is published worldwide. The message has really gotten out there. I’m very proud of that. These are people reading the book that I will never see and yet, I know the information that they’re gleaning from reading this book is going to help them, and it makes me feel good at the end of the day in terms of what I’m doing.
