On this week's podcast, Pat Cobe, senior menu editor of Restaurant Business, and Bret Thorn, senior food & beverage editor of Nation's Restaurant News and Restaurant Hospitality, discuss a week's worth of eating experiences, starting with a dine-around in Chicago. The two editors were in Chicago for the last conference of the International Foodservice Editorial Council, familiarly known as IFEC, and the opening event featured a tasting tour of three restaurants in the city's Fulton Market district. Chef-owner Joe Flamm of Rose Mary spoke about his popular Croatian-Italian restaurant while we chowed down Pork Ribs Pampanella with Calabrian Chile Agrodolce and walnut relish as well as Beef Cheek Gnocchi; at Publican Quality Meats we learned how to spatchcock a chicken while nibbling on Grilled Pork & Mango Brochettes, Porchetta Sandwiches and charcuterie; and at Leña Brava, we sampled Watermelon Aguachile and al pastor-marinated Watermelon Steak and sipped a watermelon cocktail and mocktail.  While in Chicago, Pat also had dinner at Eataly, and was reminded of how this Italian retail emporium is also a worthy restaurant destination. She joined friends at Vino &, an in-store wine bar with a large menu featuring specialties like Tagliolini al Limone, Pollo alla Milanese and Grilled Branzino, all of which her table ordered along with a nice bottle of red wine.  Bret continues to explore his Brooklyn neighborhood, where he discovered some Eastern European meat dumplings that he brought home for dinner. First, he tried them the traditional way, topped with sour cream, but then concocted an Asian-influenced “ranch dressing” with chili crisp and Chinese black vinegar that took the dumplings into another flavor dimension. This week we share an interview with renowned chef and restaurateur Michael Mina, whose new cookbook, “My Egypt,” was just published. Subtitled “Cooking from My Roots,” the book relates Mina's experiences of journeying back to Egypt—which he left at the age of two—to rediscover his family's culinary legacy. The result is a book filled with stories, firsthand cooking experiences and a lifetime of recipes. Mina operates more than 30 restaurants in the U.S., including the recently opened Orla in Santa Monica, California—his first to specialize in Egyptian-Mediterranean cuisine. Here he elevates the dishes he enjoyed eating around his mother's table and shares the food he tasted and cooked in Egypt. Listen as the chef shares his passion for Egyptian food and talks about how Mina Group is ramping up restaurant openings.

Chubby Carrier joined Discover Lafayette to share his life journey in the Zydeco music world and how he learned the business from his father, Roy Carrier. In a world where artists can be taken advantage of, Chubby is an astute businessman who realized early on that he had to control his own destiny. Chubby Carrier and the Bayou Swamp Band's release in 2010 of Zydeco Junkie won the Grammy in the category of Best Zydeco or Cajun Music Album in 2011. Ironically, that was the last year the Grammy's recognized zydeco and cajun music; after that year, the award has gone to Best Regional Roots Album which can be awarded to any traditional American music. His band offers a unique blend of traditional Zydeco elements with contemporary influences including elements of rock, blues, and funk. Chubby's ability to fuse different styles and his captivating stage presence have allowed him to reach a broader audience beyond Zydeco aficionados. Chubby is a third-generation Zydeco artist following in the footsteps of his grandfather, Warren Carrier, his father, Roy Carrier, and his cousins, Bebe and Calvin Carrier. His music is so cool, you can't help but tap your feet and rock when you hear his band's compelling beat. Jan Swift met Chubby when they both served as Ambassadors for a Smoke-Free Louisiana. Many musicians have died over the years from exposure to secondhand smoke, including their mutual friend, David Egan. Luckily, Chubby has not gotten cancer and he is looking forward to many more years of sharing his unique musical talents. When you meet Chubby, you know you are in the presence of greatness. Thank you for listening to this true hero and local talent who is proud to call Acadiana his home. We ended our interview with his song, Another Pretty Face from his album, Back to My Roots. Listeners met Howard in the kickoff episode of Season 4 when he brought us tales of attempts to drain the Great Dismal Swamp and the Ballad of Romaine Tenney.  This time Howard discusses "The Land of Many Uses"--our national forests.  From the mass destruction of old growth American timber throughout the 19th and 20th centuries to the creation of national forests...these national treasures may not be as safe as we would like them to be.  He then explains to us in his own words what happens when "My Roots are Deeper than your Pockets"--when one's land is more important than any amount of money, even if the landowner lacks sufficient financial resources.  We as right of way professionals deal with the idea of "just compensation" to the point that we may actually become desensitized to the sentimental and emotional attachment to real property that some people feel.   Thank you to Blackbird Right of Way, LLC for its generosity in making this episode possible.  Blackbird is a DBE certified right of way acquisition company that specializes in complex relocations throughout the United States.  From one parcel to 100, make Blackbird part of your team!

(02:34) Vulfpeck - New Guru (06:07) Richie Havens - Going Back to My Roots (10:59) Fleetwood Mac - World Turning (14:42) 张基河和脸们 - 뭘 그렇게 놀래 (What's So Shocking About That?) Chantal Adams grew up with the teachings and Haida laws of respect and consent. Along her journey, she realized how important deep meaningful connections and conversations were to her: along with belonging and connection to community, land, and water. Wanting to continue building connections, in a healing way with people, Chantal pursued a degree in Child and Youth Care with an Indigenous Specialization. She became involved in re-search with Kinship Rising, that re-centers Indigenous ways of being through arts and land-based methodologies. It was through this journey that she found her passion for research and storytelling. It is Chantal's keen affection for people, nature, healing, reclamation, and belonging that drives her research and creative journey.Gabriel Swift has always been fascinated by the process of creating art. Intrigued by stories about the power of the natural world and the human condition, he witnesses how visual storytelling provides an outlet to share stories across cultures and generations that can make lasting impacts on our lives and the decisions we make. He has worked alongside an award-winning team as a cinematographer on the feature length film “Coextinction.” Everyone has a voice, a perspective, and a story, they just need to be heard. Gabriel's focus is on creating films that heal and foster connection to ourselves and the natural world.  Nicolette partnered with Gabriel and Chantal on create two documentaries, 1) Grounded in My Roots and 2) Food of Our Ancestors which tell the stories of discovering food as medicine and Nicolette's journey running and biking across Canada to uncover the barriers that BIPOC peoples face in accessing clean real foods. Today's episode shares how Indigenous, Black, People of Colour (BIPOC) are disproportionally affected by chronic disease and how human and planetary healing can happen through re-connecting with food, the earth, ourselves, and our spirits. Chantal shares stories from her Haida Gwaii lineage and Gabriel shares how he was nurtured through spending time with his family in India. They discuss how their generation is choosing to live differently from the Baby Boomers that over consumed and how overconsumption led to the mental and physical health breakdowns and climate change that we see today. The first step: look to our Elders and to Nature. We need to connect to lineages and roots and bring them to the forefront if we are to heal ourselves. Find Chantal and Gabriel at:Website: https://sgaanuweestudios.ca/Instagram: @ sgaanuweestudiosGabriel Swift: https://www.gabrielswift.ca/Instagram: @gabrielcswiftVimeo: https://vimeo.com/gabrielswiftChantal Adams: https://www.chantaladams.ca/Instagram: @chantaladams Discussed on the PODCAST:Audrey Siegl - https://bit.ly/3M8TEcKFilm - Gather - https://gather.film/Film - Coextinction - https://coextinctionfilm.com/Russel Brand Podcast - https://www.russellbrand.com/podcasts/Wim Hoff - https://www.wimhofmethod.com/Landon Copplestone - https://landoncopplestone.com/Shi Narayani Holistic Centre - https://bit.ly/3NeKfleGrounded In My Roots - https://www.groundedinmyroots.com/Food of Our Ancestors - https://www.youtube.com/watch?v=fU_E_v12Rh0 Watch the trailer for Nicolette's new film Food Of Our Ancestors - https://bit.ly/FoodAncDoc If you are currently battling a Chronic Degenerative Disease, Nicolette is doing one on one consultations again. What's the symbol for air? Why isn't there any air in space? What exactly is space? Can space be considered anywhere? Isn't space everywhere? Everything in everyone and in everything is out in space as well as right here. Just because infinity never ends doesn't necessarily mean it has no beginning. Everything eventually leads to some place/somewhere. Start. End. Begin. Finish. Repeat. When any of this or all of this started really doesn't matter just like wondering or thinking when will this all end is equally irrelevant. It's not written in the stars for a reason.... Nova! In this episode of We Play It, BK (Bedazzling Kamikaze) and Adui Yako (AY The Wide Nose Bandit) switch into a new length of sharing and deliver a very fruitful and bountiful show of musical selections and tastes. With all of the distractions in life and adulthood and just breathing on Earth, these 2 song junkies, beat headz, & melody fans pay tribute to a fallen star, say less by playing whole songs, and as always feel each other out for vibez, communication, and simple entertaining truths. There maybe $6 gas where you live, some sort of war or whatever on Earth, and even mass poverty and hunger very near to you but WPI guarantees they will always display beauty and respect with every song they play. Follow us on Instagram @MiamiMusicPartners or visit us online at MiamiMusicPartners.com, to stay up to date on our latest special events, and podcast special guest mixes! SPECIAL GUEST BIO. - ROGER SANCHEZ:    Just one in the cast of crucial producers who made Strictly Rhythm the premiere American house label during the early '90s, Roger Sanchez grew into a prolific remixer, world-class mainstream DJ, and top global-house name by the end of the decade. Though he concentrated more on mix albums than proper studio productions under his own name, Sanchez gained much respect with club kids as well as the dancefloor intelligentsia.   Born in New York to parents of Dominican heritage, Sanchez attended Manhattan's School of Art & Design with several future hip-hop legends including Kurtis Mantronik. He was well into the graffiti and break-dancing scene during the early '80s and began DJing by the age of 13. After mixing for several years at New York hot spots like the Tunnel -- even while he was studying architecture at the Pratt Institute -- Sanchez finally left college in 1987 to give music a full-time shot. His club Ego Trip was soon booming (with Sanchez mixtapes selling briskly on Broadway) and he never looked back. By 1989, Gladys Pizarro from Strictly Rhythm Records had touched base to see if Sanchez was interested in production; one year later, he had recorded his first single, "Luv Dancin," as Underground Solution.   The single's tough underground grooves charged the New York house scene, then just on the cusp of a turnover from the smooth garage sound to a rougher style influenced by European trance and techno. Despite stumbling into remixing by accident -- after giving a bad review to a single, he was tapped to rework it -- Sanchez became more than competent at the game, and beginning in 1991 he worked on tracks for Babyface, Michael Jackson, Diana Ross, Janet Jackson, Chic, M People, Basia, Incognito, and Soul II Soul.   Later Sanchez productions -- a 1994 Latin dub-house burner named "Sumba Lumba" (as Tribal Confusion), the following year's hard-hitting Strictly 4 the Underground EP (as Roger S), and that same year's "Release Yo Self" (as Transatlantic Soul) -- cemented his status as one of Strictly Rhythm's greatest assets and one of the world's leading mainstream producers. Though his own One Records collapsed in 1995, Sanchez formed another label named Narcotic and signed up with the British club Hard Times to release his first full-length. The mix LP Hard Times: The Album featured the S-Man (with just two decks, a mixer, and a crate of records) proving his worth as a DJ in addition to his much-hyped studio work. He continued in the mix-LP vein, releasing volumes in two high-profile series (Mixmag Live!, United DJ's of America), and the Freeze collection Roger S. Mega Mix. In 1997, Narcotic Records released "Back" (as S-Men), the fruits of the dance super-group formed by Sanchez, Junior Sanchez, and DJ Sneak. One year later, Sanchez released S-Man Classics, a two-disc collection including his best remixes backed with his best own productions. A few mix albums followed during the next three years, but a full production album, First Contact, finally dropped in 2001.   Sanchez launched a new label in 2002 named Stealth -- home to his impressive rate of mixes, as well as re-releases and new productions from himself as well as other artists. The following year, he won a Grammy in the category of Best Remixed Recording for his remix of No Doubt's "Hella Good." Release Yourself, his long-running terrestrial and online radio show, won an International Dance Music award for Best Podcast. The show celebrated a decade of broadcasts when the mix effort Release Yourself: 10th Anniversary Edition dropped in 2011, the same year that Sanchez joined with the Far East Movement for the single "2gether." The singles "Troubleman" and "My Roots" arrived in 2013 along with the mix album Release Yourself 13. ~ John Bush, Rovi● Soundcloud - click here● Beatport - click here● Spotify - click here

We Have the Cure For Your Blues With Scott Heller Vocalist and Cigar Box Guitarist From Agape Blues Company!

18WT 003 Join in the unique sounds of two brothers reminiscing as Patrick interviews his “Dear Old Brother” Scott, Vocalist and Cigar Box guitarist from Agape Blues Company in Upstate N.Y. They discuss Scotts’ journey to the badlands of South Dakota where he went yet again to The Sturgis Motorcycle Rally where it was a balmy 68 degrees in August. From there he took off to Las Vegas, just a floor above Hell and a mere 108 degrees. His last stop this side of the Mississippi brought him to the studio right here two floors south of Hell in Beautiful 112 degrees and rising Phoenix. His days spent here taught him what hot truly means. In studio (air-conditioned, much to his delight) the two brothers talked about how his music began. He was in church playing and wanted to minister to those outside the walls with his music. So, he went back to his roots of Blues music, his first Blues band was Deep Blue Shag but was quickly renamed to Deep Blue Storm after much debate among the members. At the time one suggestion was Agape Blues Company (which means God’s Love), however it was voted down. When Scott decided to reach outside the church with his music, he reached out to the player in his old band that came up with the name Agape Blues Company for his blessings to use the name. When Scott is writing new music, it starts with a snippet of an idea and grows from there. He has even had to pull over on the side of the road while driving to write down an idea for fear of losing it. He belonged to a song writing club for a while and the assignments given were just words. The words had to be in the song and that was it. The album “One Way” has several of those songs on it. The song “Blues in Heaven” has the phrase “If morning never comes” that was the assignment. The song used right here in our Podcast is called “One Sinners’ Prayer”, Scott talks about how that is about his Salvation. When asked what his favorite song to play off the album is, his reply was “My Roots”, this is one where he wrote down on a road trip on the side of the road. It is done in “Muddy Waters” Style. This is also done with his two-string Cigar-Box guitar that he made and named “The Jesus Freak”. He said it gets its’ own introduction on stage and is very unique to play. They have many Traditional hymns on the album that are done in Blues style that are called “Barrel House Hymns”. The Heller Brothers continue the interview talking about inspirations, coffee, beer and even boilermakers to start it off. This part goes more into cigar box guitars that Scott has made. The first one was with their father. There were two smoked salmon boxes and that is where he began. Then his church was undergoing renovations, Scott asked the man in charge of construction, “Gunny” for a piece of wood. After some negotiations and a promise of one of the two new guitars a deal was made and away he went with a large piece of wood. The first one he made the neck too long on and had to cut it down to even be able to string it. It is still about 2 ½” longer than a normal cigar box guitar and therefore it brings out a deeper sound. It is known as a baritone guitar. The guitar sat for over a year because he didn’t know how to play it. He went to a cigar box festival in York, PA to get opinions on it. There he got bit by the culture and the music. He went home and prayed on it; some of the songs he made on it are “When I get to Heaven”, “He Loves You”, “One Step Closer”, & “Eyes of Faith”. All different styles from punk to basic blues. The brothers discussed how he played guitar when he was younger and then quit and came full circle to play again. READ MORE!

The LAC has put a call out for volunteers to be part of a collaborative project to transcribe, add keywords and image tags, translate content from an image or document and add descriptions to digitized images using “Co-Lab” and the new “Collection Search”. The more volunteers that participate in this project, the more accessible and usable the digital collection will become for everyone. You can become a contributor in two ways: Take on a “challenge” of images put together by experts at LAC Use the new Collection Search to find materials that matter most to you, then enhance them. Anyone can now contribute to digitized images that are found while doing research. The volunteer must register and create a user account so you can keep track of the records to which you have contributed. Once this free account is established, a volunteer can contribute as much or as little as they would like. The “Challenges” are content put together under a theme. For instance, under the “Challenges” tab on the website you could choose to transcribe the “Correspondence between Sir Robert Borden and Sir Sam Hughes” The theme for this challenge is listed as “military heritage.” Or another “Challenge” someone might choose could be “New France and Indigenous Relations” whose theme is listed as “Aboriginal Heritage.” There are also new “Challenges” being posted to the site, so check back often. Maybe you would like to contribute using Collection Search. The website describes how this tool works: “When you are conducting research using our new search tool and find images, you'll see that you have the option to enable this image for Co-Lab contributions. After answering just a few short questions, you can enable an image found in Collection Search for Co-Lab use and transcribe/translate/tag/describe to your heart's content.” There is a short tutorial to get you started and show you the ropes. The launch of Co-Lab also introduces a new image viewer, which allows you to zoom in on different parts of the image or move around the image itself. This tool is useful when transcribing or adding keywords and image tags to describe all the small details. Every image in Co-Lab is subject to review by other members. If something is found to be incorrect or if you find something that is wrong, it can be marked as “Needs Review” for others to take another look and decide what is correct. The best part about this new Library and Archives Canada tool is that every contribution by the volunteers benefits fellow genealogy researchers and improves records access. Every additional tag or translation becomes new metadata and is searchable within 24 hours of the transcriptions or tagging being done. THE ALBUM: Times change. We get old like a fine wine still aging, but we are not quite ready to close up shop. We take a long hard look and where we started, and how we got here. Long gone are the days of the cassette tape, the 2 inch tape, and the 8 track. While the graduates switch from CDs to laptops, one thing remains the same. The pulse of the city, the people and the music. This is the path I've traveled and my roots revisited. A new collection of collaborations, remixes, and some unreleased material with featured artists Gypsymen, Foremost Poets, Davidson Ospina, Christian Scott, DJ Ax, Charles Dockins, Rainy Payne, DC's Born I Music, Moba Sound and more. The Truth Only Comes One Way! Play It Loud! One Love. -- Oscar P THE TRACKLIST 01 // Oscar P – The Love Track – NYC Mix 02 // Oscar P - Time Machine (Oscar P & C. Scott Heavy Mix) 03 // Oscar P & C. Scott - The Message (Philly NYC Tribute Mix) 04 // Gypsymen - Hear The Music (Ospina & Oscar P Remix) 05 // DJ Ax Ft Charles Dockins - My Fathers Arms (Oscar P & C. Scott Mix) 06 // Davidson Ospina, Rainy Payne - Night Vission (Oscar P & C. Scott Heavy Mix) 07 // Oscar P, C. Scott, Born I - That Fly Sht (Original Mix) 08 // Oscar P vs Moba Sound - Voices (Oscar P & C. Scott Mix) 09 // Foremost Poets - Moonraker (Oscar P & C.Scott Mix) 10 // Oscar P & C. Scott – Cuz U Luv Me (Original Mix) Oscar P is recognized as an innovator and force in New York City's music scene. His musical style fuses his influences not only from NYC, but also Chicago and Detroit. Creating a unique sound that can be heard on remixes for artists as diverse as Marvin Gaye, Peech Boys, John Legend, Beyonce, Foremost Poets, Gypsymen, Todd Terry, and Physics. With a career spanning 25 years, his tracks are popping up on radio and club playlists from some of the biggest DJs in the industry. The first single off the album by Oscar P & C. Scott - The Message was #1 on Traxsource for 2 weeks, and remained in the Top 10 for 5 weeks. THE MESSAGE was played heavily by David Morales, Frankie Knuckles, Aki Bergen, Todd Terry, Louie Vega, Miguel Migs and many other top DJs during WMC 2012, making it one of the TOP tracks of the Winter Music Conference. In 2011 he released the 25/8 album to great reviews, which garnered strong support from the likes of D.O.N.S., Sonny Fodera, Stacey Pullen, DJ Sneak, Hector Romero and many of his peers. "Its always special when people you look up to, tell you that you've done a great job. It means the world." In 2010 Oscar P's "Remixed & Reconstructed", hit #1 on Traxsource's Top 50 Albums. He then scored 2 more top 10 hits on the site with music partner Davidson Ospina on remixes for Maurice Joshua, and Mustafa. Mid-summer came the global smash remix for Sexual Healing by Marvin Gaye. Supported by the likes of Tiesto, Tom Novy, Inland Knights, Robert Owens, Milk & Sugar, DJ Sneak, Kaskade, Carl Kennedy, Eddie Amador, DJ Hell, Miguel Migs, Michael Gray, Black Coffee, Quentin Harris, Mark Knight, Grant Nelson and many more. DJ Magazine UK - Oscar P drops a shade of house nestled between the downright dirty and the sun-drenched. Think Oliver $'s 'Doin' Ya Thing' meets Roland Clark's 'I Get Deep'. Lets keep an eye on this guy! Tillate Magazine Weekly Edition - Greg Stainer and Oscar P's RIDE was our Top 5 pick a fews month. Cant wait to see what he does next. M8 Magazine UK - There is an unspoken PRESSURE for top brands and DJs to show force each year at WMC. Oscar P does this the right way. Every Year! Phil Turnipseed, DJ Times Magazine - Just like the remixes coming out from his camp, the new album delivers time and time again.  BK 2 My Roots is available at    Welcome to Open Bar Music.
