Singer/songwriter Emerson Magaña's childhood was filled with the rhythms of Central and South America. Born in Colima, Mexico, he first picked up guitar from his father. Eventually, nature, women, and tequila inspired him to write new original music. Fabriqué à partir d'agave bleu, cet alcool est très plébiscité, surtout aux États-Unis et au Canada. Depuis les années 1990, sa consommation a fortement augmenté à tel point qu'aujourd'hui, le Mexique exporte 80 % de sa production nationale à travers de grandes marques qui ont tiré parti des traités économiques nord-américains. Mais derrière ces modes de consommation se cache la ruine des producteurs. Situés en bout de chaîne, ce sont eux qui vivent les crises du marché. De notre correspondante de retour de Tequila, La demande mondiale en boissons alcooliques a tendance à se tasser, alors que la filière ultra-industrialisée de la tequila traverse une étape de surproduction liée aux conditions particulières de la culture des agaves. Depuis des mois, la plante vendue aux distilleries ne vaut plus rien, le prix s'est effondré de 98 %. Pendant que les grandes maisons de tequila continuent de vendre des bouteilles et de faire rayonner le produit auprès des touristes, ce sont les producteurs du Jalisco – ou agaveros – qui en payent le prix. Dans le village de Tequila, le tourisme est l'autre activité principale. Chaque jour, la Casa Sauza, comme une centaine d'autres fabriques, ouvre ses portes aux visiteurs. « De tous les agaves que vous voyez, il n'y a qu'avec la variété bleue qu'on peut produire de la tequila, explique Marisol. C'est la norme que nous devons respecter. » Une fois mature, le cœur de l'agave, qui sert à la fabrication, pèse 30 kilos. « À chaque tonne récoltée, les ouvriers agricoles, qu'on appelle "jimador", sont payés entre 15 et 20 euros », poursuit Marisol. La région produit annuellement environ 500 millions de litres de tequila, un marché de plus de 13 milliards de dollars. Depuis 2019, il a planté 13 000 agaves, ce qui devrait lui rapporter entre 750 et 1500 euros. « Ce n'est pas beaucoup », déplore-t-il, et c'est bien moins que son investissement initial. Sans compter les années de travail, car la plante pousse pendant 6 ou 7 ans avant de pourrir. La surproduction actuelle fait chuter les prix. « C'est cyclique tout cela. Peut-être que d'ici quelques années, le prix sera bien mieux. Ici, c'est plein d'agaves, montre le producteur, moi, j'ai planté d'ici jusqu'en haut de la colline. Le problème, c'est que là-bas, ils plantent en excès, incendient et déforestent pour planter. » « C'est la loi de l'offre et de la demande » La très rentable industrie de la tequila attire la spéculation et répercute les effets du marché sur les producteurs. « C'est la loi de l'offre et de la demande, souligne Martin Muñoz Sanchez du Conseil régulateur de la tequila, beaucoup d'investisseurs sont arrivés dans le secteur sans contrôle, et ils ne savaient rien de la culture de l'agave. C'est un cercle vicieux. Quand le prix augmente, tout le monde plante. Ensuite, le prix chute et tout le monde se démotive. Les gens arrêtent de planter et ça génère un autre manque. On en verra l'impact dans 6-7 ans. Aujourd'hui, même si cela parait illogique, nous recommandons de planter des agaves. » La tequila représente 2 % des spiritueux consommés dans le monde.
