Anmelden muss man sich nicht, jeder kann spontan vorbeikommen. Über eine Woche lang hat's gedauert. Jetzt ist der Ausnahmezustand auf einer der großen Pendlerstrecken auf der Schiene aber vorbei! Ab Freitag sollen die Züge endlich wieder normal zwischen Gießen und Frankfurt durchfahren. Keine Umleitung, kein Umsteigen auf Busse mehr. Außerdem: Pistolen, Gewehre, vollautomatische Waffen, kistenweise Munition, militärische Schutzausstattung und auch Hieb- und Stichwaffen - das hat die Polizei alles bei einem Mann aus dem Landkreis Marburg-Biedenkopf gefunden. Der 59-Jährige gehört laut der Staatsanwaltschaft zur Reichsbürger-Szene.

Sebastian Höpfner, Jahrgang 1986, aus Flensburg stammend ist kein Herold, der Etiketten vorliest. Er ist eher wie jemand, der einen alten Brief gefunden hat und herausfinden will, wer ihn wirklich geschrieben hat. Dass er dabei zuverlässig bei Antworten landet, die andere nicht mal als Fragen formuliert hätten, gehört zu den Dingen, die man von ihm nach ein paar Minuten schlicht erwartet. ___ Als kleinen Bonus für Dich haben wir uns Christoph Nicklas, einen der absoluten Weinfachmenschen und Fachjournalisten unserer Republik vor das Mikrofon geholt, da sich das berühmte „Judgement of Paris“ im Mai zum 20. Mal jährte und anlässlich dessen die legendäre Vergleichsprobe mit ausgewählten Weinen im Rahmen des vom Meininger Verlag durchgeführten SOMMELIER SPRING SUMMIT, bei dem die besten SOMMELIERS aus dem D-A-CH-Raum nach Neustadt geladen werden, erneut exemplarisch durchgeführt wurde. Und natürlich lassen wir es uns nicht nehmen, Christoph um seine Eindrücke zu bitten. Angedacht war es als kleiner, 10-minütiger Einspieler, und dann ist doch eine ganze Stunde daraus geworden – und das nicht ohne Grund. DANKE, Christoph Nicklas, für Deine Eindrücke – wir hätten uns noch Stunden austauschen können. ___ Doch zurück zu Sebastian, dessen Weg begann in Flensburg, wo er bei Mäder's Restauration das Handwerk lernte. Den Wein entdeckte er dann nicht im Kurs und nicht aus dem Lehrbuch, sondern im Gourmetrestaurant Die Quadriga des Berliner Brandenburger Hofs: eine deutsche Weinkarte, alle 13 Anbaugebiete mit einer Tiefe, die ihn nach eigenem Bekunden bis heute suchen lässt. Was folgte, war keine geplante Karriere, sondern eine Folge von Entscheidungen, die alle in dieselbe Richtung zeigten: Waldorf Astoria Berlin, Riva Hotel Konstanz, dann ab 2017 bis 2022 als Head-Sommelier im Restaurant Français des Steigenberger Frankfurter Hofs, einem Haus mit Michelin-Stern, in dem er die Weinkarte so aufbaute, als würde er ein Manuskript verfassen. Danach, für knapp zwei Jahre, der Taubenkobel in Schützen am Gebirge in Österreich, eines der bekanntesten Häuser der biodynamisch und naturweinaffin ausgerichteten österreichischen Spitzengastronomie. Seit Januar 2025 ist Sebastian Sommelier im Berliner Drei-Sterne-Restaurant Rutz, das von Marco Müller und dem Inhaberehepaar Anja und Carsten Schmidt geführt wird und seit 2020 als einziges Restaurant Berlins drei Michelin-Sterne trägt sowie zusätzlich den Grünen Michelin-Stern für nachhaltiges Wirtschaften. Die 800 Positionen umfassende Weinkarte des Rutz ist dort sein Instrument. Die Branche hat das alles registriert: Rolling Pin führte Sebastian Höpfner 2024 auf Platz 8 der 50 besten Sommeliers Deutschlands, 2023 unter den Top 50 Österreichs. Der Sternefresser kürte ihn 2023, der Gusto 2025 zum Sommelier des Jahres; der Schlemmer Atlas listete ihn bereits 2020 unter den Top 50. Das ist keine Preissammelmentalität. Das sind Markierungen auf einem Weg, der konsequent in eine Richtung führt: raus aus der Komfortzone, rein in das Unangenehme, das hinterher besser schmeckt. Und was hat das alles mit Lodi zu tun? Fast alles. Sebastian Höpfner hat das Talent, zwischen den Welten zu übersetzen, ohne je zu vergessen, aus welcher er kommt. Sein Leitfaden, Respekt vor der Klassik und Offenheit für die Moderne, beschreibt Lodi besser als jede offizielle AVA-Beschreibung: eine Region, in der Zinfandel-Stöcke aus dem Jahr 1886 neben Winemakers mit Betonei-Tanks und Orangewein aus Picpoul stehen. Wer am Taubenkobel gelernt hat, was nicht-interventionistisches Arbeiten mit Wein bedeutet, und wer am Rutz versteht, warum Nachhaltigkeit kein Marketingbegriff ist, der kann Lodi erklären. Und zwar nicht als Kuriosität, sondern als das, was es ist: eine der bedeutendsten Weinregionen der Welt, die sich über Jahrzehnte erfolgreich geweigert hat, so zu klingen.

Salzburg im Zeichen von Mozart 270. Geburtstag und einem Mozarteum-Jubiläum, das schon wieder Vergangenheit ist. Die 70. Mozartwoche lieferte Highlights, die sich durchs ganze Jahr ziehen werden. Geburtstag gefeiert. Genau genommen: Wir feiern ihn. Mozart, Wolfgang Amadeus. Was wissen wir über ihn, seine Familie, seine mindestens genauso talentierte große Schwester Maria Anna und das Leben als Wunderkind. Papa Leopold unterrichtete seine Kinder. Er erkannte die Talente, musste lernen, dass Auftritte seiner Tochter („nur ein Mädel“) kaum Interesse fanden. Ganz im Gegensatz zum „Wolferl“. Die Reise des Wunderkinds aus Salzburg, kreuz und quer durch Europa begann als Wolfgang gerade mal sechs Jahre alt. Als alle höfischen Kreise in Europa abgehakt waren, war er gerade mal 15. Mutter Anna Maria Mozart starb auf einer dieser Reisen in Paris im Jahre 1778. Seine Schwester „Nannerl“ wurde verheiratet und nur Vater Leopold blieb im eigentlich viel zu prachtvollen Wohnhaus am Marktplatz 8 in der Salzburger Neustadt zurück. Wolfgang in Wien, das heißt in Schlagzeilen: Mehrere Wohnungen, Konstanze, seine Frau, die er abgöttisch geliebt haben soll, 6 Kinder, von denen nur zwei überlebten. Dank seiner außergewöhnlich großen Schöpfungs- und Arbeitskraft, schrieb er Konzert nach Konzert, Oper nach Oper und Sinfonie nach Sinfonie. Biografen sagten später auch, dass dieser ständige Arbeitsstress für seinen Tod verantwortlich gewesen sein könnte. Wolfgang Amadé Mozart starb am 3. Dezember 1791 mit nur 35 Jahren. Leiter der Stiftung Mozarteum – Foto: Wolfgang Lienbacher / Stiftung Mozarteum Wie sagt Rolando Villazon, der künstlerische Leiter des Mozarteum Salzburg: Halleluja, Mozart lebt!   Das klingt wie bei Elvis, um mal auf die Legende vom Pop-Star zurückzukommen. Nur dass da bisher niemand „Halleluja“ gesagt hat. Rolando und Wolfgang konnten sich nie kennenlernen. Ich behaupte aber mal, sie hätten sich sehr gut verstanden, bis weit hinein in den Humor, der beiden zu eigen ist. Vielleicht wurde Rolando Villazon gerade deshalb zum glühenden Mozart-Verehrer und sein musikalisches Talent führte ihn eventuell auch deshalb nach Salzburg. Seit 2019 ist er Teil der Stiftung Mozarteum, erst als Kommunikator, seit 2021 als künstlerischer Leiter. Sein Vertrag wurde gerade verlängert und so dürfte er dem Mozarteum bis 2031 als künstlerischer Leiter erhalten bleiben. Es gibt noch ein paar andere: Sound of Music zum Beispiel. Mozart überall. Seine Statue, folgerichtig auf dem Mozartplatz gegenüber vom Salzburg Museum und auf dem Weg zum großen Residenzplatz vor dem Dom. Wer aus der Neustadt kommt hat eventuell die Salzach auf dem Mozartsteg überquert um dort hin zu kommen. Sie fühlt sich für das Mozarterbe verantwortlich. Hier wird das Programm der jährlichen Mozartwoche im Januar geplant und umgesetzt. Die Stiftung ist aber auch verantwortlich für das Geburtshaus in der Getreidegasse und das Mozart-Wohnhaus am Makartplatz in der Neustadt. Ehemals zusammengehörig, gibt es heute organisatorisch getrennt, auch noch die Universität Mozarteum Salzburg und das Mozarteum Orchester. Ohne Mozarteum heute auch kein Mozart in Salzburg. Mozartwoche und Stiftung Mozarteum Mozarts 270. Geburtstag und gerade ist die siebzigste Mozartwoche in Salzburg zu Ende gegangen. Auch der Geburtstag war in der letzten Woche. Geboren am 27. Januar 1756. Ein sogenannter runder Geburtstag. Immer Grund genug für ein Mozartjahr und das hat ja nun gerade erst begonnen. Aus diesen Eckpunkten ergeben sich die beiden Zahlen der Überschrift: 270 Jahre Mozart und die 70. Mozartwoche. Er zeigte uns nicht nur den Großen Konzertsaal des Mozarteums, er berichtet von der Geschichte der Stiftung, ihr Engagement, Organisation und Anspruch. Im Podcast klären wir auch die Sache mit dem Namen. Wer genau hinhört, merkt dass immer von Wolfgang Amadé die Rede ist. Linus klärt auch die Sache mit dem Namen. Nicht nur die Räumlichkeiten sind zu sehen. Beide Museen verfügen über unendlich viel Material aus der Kunst- und Materialsammlung des Mozarteums. Der Erfolg gibt dieser Tatsache recht. Immerhin besucht mehr als eine halbe Million Menschen die Museen jedes Jahr. Umgekehrt wäre Mozart heute vermutlich in Salzburg nicht so präsent, wenn es zur Mitte des 19. Jahrhunderts nicht Menschen gegeben hätte, die eine Stiftung gründeten um das Kulturgut Mozart vor dem Vergessen zu bewahren und neu zu beleben: Hat geklappt. Denn dort hat zum Beispiel die Zauberflöte einen Stammplatz im Repertoire. Research has shown that diets high in ultraprocessed foods are linked to more than 30 health conditions, according to an umbrella review of meta-analyses that was published in The British Medical Journal. Meanwhile, more exposure to ultraprocessed foods was associated with a higher risk of dying from any cause. Ultraprocessed foods now account for nearly 60% of U.S. adults' calorie consumption. Among American children, that portion is close to 70%. In other words, ultra-processed food is starting to overwhelm the American diet. You can't speak of trends in the wine trends in the wine trade without mentioning Felicity Carter. You can't talk data mining in the wine trade without mentioning Felicity Carter...in fact, I can't think of many surrounding the wine trade that you could speak of without mentioning Felicity Carter. She is a force of date (substituting for "nature"). I've got to tell you, sitting down with Felicity Carter for this episode of Wine Talks was like uncorking an old Burgundy—layered, surprising, and deeply satisfying. There's something about Felicity's perspective that just sharpens the mind. Maybe it's because she's perched out there in Neustadt an der Weinstraße, on the wine road of the Rhineland Pfalz, right at the border with Alsace. Or maybe it's just down to the years she's logged at the intersection of writing, advisory work, and researching high-end wine trends. You know me—I love a guest who isn't afraid to press into the hard truths and then turn them over like a newly racked barrel. Felicity didn't disappoint. Right out of the gate, she set the tone: before you start spinning stories about your wine, you better know your cost of goods. Learn Excel, she said. It wasn't fancy, but, boy, did that resonate with me. Nothing romantic about spreadsheets, but there's also nothing more sobering than realizing that most people in this business skip the basics. What I really appreciated was how Felicity drew a line in the sand about the current state of the wine industry—not just saying “it's tough out there” (though it surely is), but also peeling back the bigger picture. She's got this knack for linking what we see at the store or on Instagram right back to seismic shifts underway. She brought up this old book, “The Empty Raincoat” by Charles Handy, to frame what's happening now: the wine industry is at the tail end of a 40-year golden run and we're sliding into a new, uncertain era. It reminded me of my own business, the highs of 2007, and how everything since then feels like riding out after a storm, trying to read new winds that keep shifting. Felicity didn't shy from the stickier discussions either—like the damage done by “mummy juice” wines and those forgettable bulk bottles that flooded the market in a misguided effort to market to women. She's got strong opinions on that, and so do I. We both bemoaned how those wines aimed at mothers after a long day might have alienated a generation—or at least set the table for younger drinkers to turn their noses up at what their parents drank. And while I always want to reach for the romance of wine—the history, the sense of being part of something ancient—Felicity was bracing with her take: people buy wine because they like the taste and the fit, and they make up the romance later, mostly to themselves. We commiserated over antiques collecting dust—literally and figuratively—in our homes, the same way “tradition” can just become a nice story rather than a selling point. But here's what I loved: Felicity isn't a doomsayer. Sure, the wine industry is congested. Sure, Gen Z might be drinking less wine—maybe because, as Felicity points out, no one wants to do what their mother did—but she still sees opportunity. There's hope in innovation, in making products for new tastes, and, yes, in getting our business basics right. If you want to make money in wine, she says, embrace the numbers before the stories. And I have to agree. At the end of the day, Felicity brought the clarity that's so easy to miss when we get caught up in the swirl of nostalgia. Sometimes you need someone to remind you that, yes, wine is culture, and yes, it's business too—and the two are tangled in ways we all have to keep learning to navigate. Thanks, Felicity.
