Today on our episode #389 of All in the Industry®, Shari Bayer has a special show in honor of James Kent, also known as Jamal James Kent, an incredible chef, restaurateur, husband, father, and friend, who suddenly passed away this past weekend from a heart attack at the young age of 45. The New York Times wrote that James was “a distinguished chef and successful Manhattan restaurateur who seemed poised to become a food industry tycoon.” He was an extremely well-respected leader, and had already accomplished so much in our industry, and simply put, he was loved. As a tribute, we are rebroadcasting our episode #253 with James, which originally aired on Wednesday, June 3rd, 2020, when Shari spoke with him remotely during the trying times of Covid. James' company, Saga Hospitality Group, includes restaurants, Crown Shy (one Michelin star) and Saga (two Michelin stars), and cocktail bar, Overstory (No. 3 on North America's 50 Best Bars list), which are all in the same building in Manhattan's Financial District at 70 Pine Street. Crown Shy is on the ground floor, and Saga and Overstory are part of the 62nd, 63rd, 64th and 66th floors, along with private dining room, 12 terraces and 360 panoramic views. James future plans included Snackville, re-imagined culinary concepts at the amusement park on Santa Monica Pier in California as a partnership with Saga Hospitality Group and private equity platform, S C Holdings; several projects from fine dining to a fast-casual chicken sandwich concept with NBA great LeBron James, whose investment firm is LRMR Ventures; a 140-seat restaurant at 360 Park Avenue South in Manhattan, inspired by the Grand Central Oyster Bar with Executive Chef Danny Garcia, who was just named winner of Top Chef: Season 21; a new bakery and casual all-day cafe in the newly renovated Domino Sugar factory building in Brooklyn with Executive Pastry Chef Renata Ameni; and five restaurants in partnership with Paris luxury department store, Printemps, at 1 Wall Street, led by Culinary Director Gregory Gourdet. James was also working with Shari's publisher Phaidon on a new book to tell the story of his restaurants at 70 Pine and his life growing up and cooking in NYC. A Greenwich Village native, James started his culinary career as a summer apprentice at Bouley when he was fifteen years old, and has since spent time in the kitchens of Babbo, Jean-Georges, and Gordon Ramsay. James joined the team at Eleven Madison Park (EMP) as a line cook and was quickly promoted to sous chef, and in 2010, he placed first in the Bocuse d'Or USA Competition; then representing the US at the international finals of the Bocuse D'Or in Lyon, France, placing 10th in the world. When he returned to New York, he was named chef de cuisine of EMP, and under his leadership, the restaurant received numerous accolades including four stars from The New York Times, three Michelin stars, and a coveted spot on World's 50 Best Restaurants. James was promoted to Executive Chef of The NoMad in the fall of 2013, the same year that it received one Michelin Star. In 2017, he left to pursue his first solo project, an ambitious pair of restaurants in the landmark Art Deco building at 70 Pine Street in New York's Financial District, with his partner Jeff Katz. Crown Shy, the first of those restaurants, opened in March 2019, and received 2 stars from The New York Times and one Michelin Star just six months after opening. A Greenwich Village native, James Kent started his culinary career as a summer apprentice at Bouley when he was fifteen years old. After taking classes at Le Cordon Bleu in London and Paris then graduating from Johnson and Wales, James moved back to New York where he spent time in the kitchens of some of New York's most storied restaurants including Babbo and Jean-Georges. In the spring of 2007, James joined the team at Eleven Madison Park as a line cook and was quickly promoted to sous chef. In 2010, James placed first in the Bocuse d'Or USA Competition; he then represented the United States at the international finals of the Bocuse D'Or in Lyon, France the following year where he placed 10th in the world. When he returned to New York, James was named chef de cuisine of Eleven Madison Park. Under his leadership, EMP received nearly every accolade bestowed on a restaurant including four stars from the New York Times, three Michelin stars, and a coveted spot on the San Pellegrino list of the World's 50 Best Restaurants. James was promoted to Executive Chef of the NoMad in the fall of 2013, the same year that it received one Michelin Star. He left The NoMad in 2017 to pursue his first solo project, an ambitious pair of restaurants in the landmark Art Deco building at 70 Pine Street in New York's Financial District. James opened Crown Shy, the first of those restaurants, in March 2019. Just six months after opening, the restaurant was awarded a Michelin star. After 18 months of pandemic-related delays, the pair opened SAGA – a fine-dining restaurant in the tiered spire of the building–in August of 2021. In October 2022, SAGA was awarded two Michelin stars. James is an active supporter of a number of charities working to eradicate childhood hunger in New York City including No Kid Hungry and ReThink Food, for which he sits on the Chef's Council. James has twice co-chaired the annual Chef's Benefit dinner for Cookies for Kids Cancer, a nationally-recognized organization that provides funding for pediatric cancer research. And he's a mentor for Ment'Or organization devoted to inspiring culinary excellence in young professionals and preserving the traditions and quality of cuisine in America. In this episode, Michael and James discuss the mindset of leading a team in a high-stress environment, the key to establishing a positive company culture, and how to carve out time for yourself every single day.

Where do you find submissions? (DuoTrope, Submission Grinder) Where do you log/track your submissions? Story title, summary, word count, date completed (of writing it), rejected, date submitted, publication, editor, contact name, what they said. ALWAYS follow the Submission guidelines. Al Coro, and Saga, were each recently awarded two stars from the 2022 Michelin Guide for New York – the only new restaurants added among 13 in this category. The podcast where we talk about sustaining open source for the long haul. We have an exciting episode today because just like long haul truckers, open source maintainers are the people who are keeping the world alive with open source. What we're excited about is a talk that we gave at OSPOCon in Austin. The talk was called, Panel Discussion: A How-to Guide for Contributing to Open Source as an Employee. This discussion was super important because employees do put a lot of work into open source code, and we wanted to talk about how to contribute to open source better. So, along with Richard, we have four other esteemed colleagues that were a part of this amazing talk, and we decided to put it on this podcast because it represents an initiative that is going to try to showcase to companies how to authentically participate in open source. The panelists joining us are Deb Nicholson from the Python Software Foundation, Alyssa Wright from Bloomberg, Josep Prat from Aiven, and Duane O'Brien from Indeed. Go to valerieihsan.com/retreat for more information.   Show Notes: What's your one thing for the month of September? Here's what I learned about accountability groups years ago.  They're awesome. And here's why: I have some mutated Wonder Woman glitch in my brain that makes me volunteer for jobs or writing projects or helping friends out at a rate that would stagger a cheetah. And it ends badly. I'm either stressed out so much that I start eating my weight in potato chips and chocolate bars (sometimes candy by the bag), crying, or I abandon everything. Jump ship and sleep. My sign that depression is looming. Overwhelm = Depression in my body and mind and spirit, so I need to be on guard. Which is difficult when my default setting is, "How hard could it be?" So, accountability groups. The biggest take-away from my group was this: If you have too much on your list, none of it gets done. Bam. I remember hearing, Three things. That's all you can do. If you get those three things done and you have time and energy left, great. Do more. But you can only pick three things to focus on this week. And I'd cry. In Barnes and Noble's Starbucks cafe. Cry because I could only choose three things to focus on when I KNEW in my cells I had 84 things to do. I remember hearing, I think you should not put anything else on your plate unless your house sells. And crying in Springfield's Public House because I couldn't bear the thought of not working forward on my dreams while I did this other humungous thing--fixing up and selling my rental house. I hate being told that I need to prioritize. I despise the perceived weakness in not being able to do it all. Sure, yes. Set a pomodoro timer for 25 minutes and focus on one thing at a time, but can't I do that 84 times? No. I'm too scattered. It's never the quality Deep Work that Cal Newport talks about, or The One Thing that Gary Keller writes about. And it's certainly not the Way of Essentialism that Greg McKeown talks about. Have you read this book? Here's a taste: (read pg. 7 with accompanying illustration). Scattershot and spaghetti on the walls do not get things done. And you're perpetually in Putting out Fires mode. At the end of the day, answering your emails isn't nearly as satisfying and productive as writing 500 words in your manuscript, or building another page on your coaching and editing website. I have to choose one thing so that I CAN get the other things done. I know it's counter-intuitive. Seriously. I know. But you know what else I do if left unchecked? Read ten books at the same time. And I don't retain any of it. I never read long enough in one book to sink into the meaning and message, or the character's lives. When that happens now (thankfully MUCH less frequently--like maybe once a year), I force myself to pick one book and finish it. And then I pick the next one and read it. And my pile diminishes. And then! I feel the glory of picking out a brand new book and reading it in its entirety, with no guilt, with no 'hurry up and get through this book because I have three others I'm half way through that I need to get to.' And so it is with the author life. We all have hopes and dreams and goals and projects and maybe even tasks and backlog. The coolest thing that happens when we focus on one thing at a time is getting to the end of the year and reviewing what you've accomplished. I spent most of last year running around higgledly-piggledly  and feeling way more stressed than normal, and I STILL managed to start a podcast, and a Patreon page, adopt another dog, make important business decisions, sell a house, retire from my massage practice, start a new job at a bookstore I love, and design a signature coaching program that I'm hoping with one day fund my husband's retirement and our move to Costa Rica. That's a lot for someone that doesn't think they can get anything done. Focus did that. Even the little I could scrape up in odd moments between depression-induced Netflix binges. Another thing to remember about focus is that it really can prevent burnout. If you can pick out one or two things to focus on for a month (knowing there are those 82 other things from your list taunting you), you can build the self-confidence and self-esteem to start treating yourself with compassion and respect that will enable and empower you to tell yourself, "Yes, I know you are still there Big Fat List, and I'll get to each and every one of you. But you need to wait in line like everyone else here." And that is power. That is space to breathe without beating yourself up. That is accomplishing what you set out to do. That is Focusing and Finishing something.  If you pick one thing at a time to work on, you can't get burnout or overwhelm, because you've only got one thing in front of you right now. Blinders are a beautiful thing. And why focus is so important to productivity.
