When it comes to cookware, choosing what's best can be intimidating. Whether you're using nonstick, stainless, cast iron, or another type of cookware, there are pros and cons. Here we explore each use cases and discuss which are our favorites. Watch on YouTube https://youtu.be/SDuVgqzTsnc Through the years I've been asked repeatedly which type of pans work best. While there are several to choose from, for this discussion we've focused on the "Big 3", cast iron, stainless steel, and non-stick. A pan for every need While I can speak for hours on this topic, in a nutshell, I prefer to have a few different pans on hand depending on the ingredients I'm working with. If I want to get a good sear on chicken thighs and good development of fond (I said it!), I'll use a stainless, whereas if I want to fry a few over-easy eggs, I'll opt for the nonstick. And cast iron has plenty of uses too. It's incredibly durable making it ideal for dishes that start on the stovetop and move to the oven, like a potato frittata. It's great for many other dishes as well, such as cast iron pan pizza, peach blueberry crisps, and many more. But they all have a downside! Cast iron isn't fun to clean or maintain, stainless if not heated properly can cause ingredients to stick, and non-stick pans are far less durable and have shorter lives. In this episode, we take a deep dive into each of these types of pans, as well as others including aluminum and carbon steel, discussing use cases, pros, cons, and more. Unsettling the environment, like walking on the carpet or stirring up settled dust, can elevate the risk of exposure and reactions. -       Individuals can exhibit diverse responses to environmental factors. Allergens may trigger severe reactions in some, while others may experience minimal effects. -       The body's response to environmental factors, including allergens, may resemble an allergic reaction. For some, exposure can lead to chronic illnesses and autoimmune responses, while others may experience it as a form of stress. -       Predicting the impact of environmental factors on health remains challenging. Factors such as an individual's detoxification capabilities, existing health conditions, and overall stress load contribute to the unpredictability of how people will be affected. [20:50] Insights on the Overlooked Dangers of Smoke Damage After Fires -       Mike emphasizes that in the aftermath of a fire, the focus should not only be on visible fire damage but also on the significant impact of toxic smoke. -       Even if the fire is miles away, the unseen damage caused by smoke can be extensive and pose serious health risks. -       Cleaning smoke damage involves more than just surface cleaning. Soft materials such as carpets, books, and clothing can absorb smoke particles and remain contaminated even after cleaning attempts. -       Mike highlights the difficulty in restoring these items effectively, requiring more drastic measures like discarding porous materials. -       Even when the visible signs and smells are gone, harmful particles can linger in the air, affecting the health of individuals. [33:30] Mike Explores VOC Sensor Insights and Real-Life Hazards -       Mike discusses the potential sources detected by a VOC (Volatile Organic Compounds) sensor, emphasizing that it may pick up cooking particulate oils, especially from activities like using olive oil or off-gassing from pans. -       Mike notes that the type of pan used in cooking can influence what the VOC sensor detects. Nonstick pans and cast iron pans, for example, may contribute different substances to the air, affecting the sensor's readings. This highlights the need to consider various factors when interpreting sensor data. -       Mike shares a real-life incident where a friend's gas range was left on without the burner being on. The gas levels became dangerously high, leading to a potential hazard. This story underscores the importance of gas safety and the fact that people can become "nose blind" to such issues, reinforcing the need for reliable detectors. [41:00] The Vital Distinction Between Fresh Air and Clean Air in Indoor Spaces -       Mike emphasizes the crucial difference between fresh air and clean air. Opening doors or windows may bring in fresh air, but it doesn't guarantee that the air is free from harmful particulates. Clean air, which is essential for health, requires effective filtration to remove pollutants. -       Plus, Mike discusses the potential dangers of elevated carbon dioxide (CO2) levels in confined spaces, such as cars with recirculating air. In a short amount of time, CO2 levels can significantly increase, reaching levels that may lead to fatigue and discomfort. Proper ventilation is essential to maintain healthy indoor air quality. -       The focus on energy efficiency in buildings, particularly sealing them for better insulation, can have unintended consequences for indoor air quality. While energy efficiency is practical, it may lead to inadequate ventilation, trapping pollutants indoors and causing discomfort and fatigue. -       Mike suggests that many energy-efficient practices are at odds with maintaining good indoor air quality. Balancing both aspects is crucial for creating environments that are both energy-efficient and healthy. [45:00] The Nuances of Air Purification Metrics and Strategies -       Mike challenges the conventional approach of using square footage as the sole metric for air purification needs. -       He stresses that cubic volume, which considers ceiling height, is a more accurate measure. This nuanced perspective is crucial for understanding the actual air volume that needs to be addressed for effective purification. -       Mike discusses the impact of HVAC (heating, ventilation, and air conditioning) systems on air purification. If an HVAC system is in place, the performance of air purifiers like Jaspr can be more effective in terms of air changes per hour. -       Mike explains the dynamics of air cleaning in closed rooms with air purifiers like Jaspr. While the purifier can achieve high efficiency within the closed space, the overall impact on the entire house may be limited if the HVAC system is in use. Understanding these nuances is crucial for optimizing air purification strategies. [47:30] The Nuances of Effective Air Purification Strategies -       Controlled environments, such as rooms with specific dimensions, can impact the effectiveness of air purifiers like Jaspr. -       Drawing an analogy to water currents, Mike explains that air moves in predictable patterns within a home. Factors like temperature, humidity, pressure, and HVAC systems contribute to the establishment of air currents. -       Mike recommends prioritizing air purification in spaces where people spend a significant amount of time, such as bedrooms and work areas. He notes that areas with high pollutant sources, like kitchens and living rooms, are essential to address. -       Instead of focusing on square footage, Mike suggests thinking about the percentage improvement in air cleanliness. She joins us today to talk about the food of Vermont's six unique seasons.   Dog Team Tavern Sticky Buns MAKES 18 BUNS A Historic Vermont Recipe Excerpted from MY VERMONT TABLE: Recipes for all (Six) Seasons by Gesine Bullock-Prado Copyright © 2023. Used with permission of the publisher, Countryman Press. All rights reserved. The Sticky Buns produced by the recipe below, as found in Gesine Bullock-Prado's new cookbook, My Vermont Table. (Raymond Prado)   The Dog Team Tavern was built in the 1920s by Sir Wilfred and Lady Anne Grenfell in Middlebury, Vermont, and was made a mission house in 1931. It became a tavern in 1936 and was listed on the National Register of Historic Places in 2002. It was a place of local legend. It had catered to the likes of Elea- nor Roosevelt and Robert Frost. And as the years passed, it was frequented by the students of Middlebury College on parents' weekend. It was famous for its generous portions of prime rib and its “relish wheel.” But perhaps most loved were the sticky buns, served as an appetizer. How can you not love a joint that serves sticky buns as an appetizer? Tragically, the tavern burned down in 2006 and has left a community longing for the sticky buns that once were. It's around Thanksgiving that the online groups wax nostalgic for these sweet treats, with recipes exchanged and notes passed. The thing I love most about these is that they are soft as can be from the use of mashed potatoes and starch water from cooking the potatoes. Long live Dog Team Tavern sticky buns! DOUGH 12 ounces (340 g) russet potatoes, peeled and cubed 1⁄2 cup (99 g) granulated sugar2 teaspoons fine sea salt2 large eggs, beaten7 cups (840 g) all-purpose flour (I use King Arthur) One 1⁄4-ounce packet (7 g) instant yeast (I use Red Star Platinum Superior Instant Yeast)8 tablespoons (1 stick; 113 g) unsalted butter Oil for bowlNonstick cooking spray STICKY Butter for baking pans2 cups (426 g) light brown sugar 11⁄2 cups (169 g) chopped walnuts FILLING 2 cups (426 g) light brown sugar2 tablespoons ground cinnamon1⁄2 pound (2 sticks; 226 g) unsalted butter, very soft MAKE THE DOUGH Boil the potatoes until fork-tender. Drain, reserving 11⁄2 cups of the cooking liquid (aka starch water), and allow the reserved cooking liquid to cool. Place a drum sieve or tamis over a large bowl and press the potatoes through the sieve with a bowl or D scraper. Add the granulated sugar and the salt to the potatoes and stir well to combine. Allow to cool. Combine the reserved cooking water and eggs in the bowl of a stand mixer fitted with the dough hook. Whisk to combine. Add the potato mixture and then the flour and yeast. Mix until the dough just comes together. Add the butter,a small piece at a time ,and continue to mix until the dough is very smooth and shiny, about 10 minutes. Transfer the dough to a well-oiled bowl and turn the dough over to coat the dough completely in the oil. Cover with plastic wrap. Allow the dough to bulk ferment until doubled in size, about 1 hour. Transfer the dough to a parchment-lined sheet pan, spraying the parchment well with nonstick cooking spray. Press the dough so that it's a rough rectangle. Refrigerate to firm up the dough, about 1 hour. MAKE THE STICKY Butter two 9-by-13-inch baking pans. Divide the brown sugar evenly between the two pans. Spritz the brown sugar with enough water to make a thick, wet paste. Divide the walnuts between the two pans. FILL AND BAKE THE BUNS Roll out the dough into a rough 14-by-18-inch rectangle, about 1⁄2 inch thick. Combine the brown sugar, cinnamon, and butter in a bowl, stirring to create a thick paste. Spread the mixture evenly over the dough, leaving naked a 1⁄2-inch strip along one long edge. Roll up the dough, starting at the long edge opposite the clean edge. Pinch the seam to seal. Cut the roll into 18 equal-size pieces. Arrange the rolls in the pans (nine in each pan with cut side down), separating slightly, cover with plastic wrap, and allow to proof until almost doubled in size, 45 minutes to 1 hour. Preheat the oven to 350°F. Bake until golden brown, about 30 minutes or until the bun interior reads 200°F on an instant-read thermometer. Immediately unmold the buns onto two cooling rack–lined sheet pans.

"Top Chef" finalist and chef Adrienne Cheatham's debut cookbook, Sunday Best: Cooking Up the Weekend Everyday, is inspired by her southern heritage alongside technique she's learned while working in professional kitchens, like Red Rooster Harlem. The book's title is a nod to the Sunday family meal, as well as the custom of, especially in black communities, wearing one's "Sunday best" outfit for church, or going into town. Cheatham joins us to discuss the book, her SundayBest pop-up series, and take your calls. This segment was guest-hosted by Kerry Nolan.  RECIPE:  Tater Tot Waffles wit­h Candied Bacon Potatoes might just be my favorite food. I love them in all forms, especially made into crispy hash browns (or rösti, if you want to be European about it). My mom used to keep a big sleeve of hash browns in the freezer when I was growing up, so my sister and I could just pop them in the toaster oven, wrap them in a paper towel, and eat them on the way to school (we sometimes even used them as “bread” for breakfast sandwiches!). This recipe combines my love for hash browns—represented by one of the world's greatest inventions, the Tater Tot—and my obsession with crispy things and sticking everything I can into the waffle iron. You can even use those crinkle-cut French fries! As long as it's a potato, anything goes. SERVES 2 TO 4   CANDIED BACON 1 pound sliced applewoodsmoked bacon ¼ cup (packed; 55g) dark brown sugar ¼ teaspoon cracked black pepper ¼ teaspoon ground ginger TATER TOT WAFFLES Nonstick cooking spray 1 package frozen Tater Tots, thawed (you can use your favorite brand, as well as any size bag to make as many waffles as you like)   Preheat the oven to 375°F. 2. MAKE THE CANDIED BACON: Line a baking sheet with parchment paper and arrange the bacon on it in a single layer. Cook the bacon for 7 minutes. Flip the slices and cook for another 5 minutes. Meanwhile, in a small bowl, combine the brown sugar, pepper, and ginger. Once the bacon has cooked on both sides, sprinkle the brown sugar mixture evenly over the tops of the slices. Reduce the oven temperature to 350°F and continue cooking until the bacon reaches your preferred level of crispiness, 10 to 15 minutes. Drain the slices briefly on a paper-towel-lined plate, but be sure to remove the bacon before the sugar cools and begins sticking to the towels. MAKE THE TATER TOT WAFFLES: Preheat a waffle iron according to the manufacturer's directions. Spray the iron on both sides with cooking spray. Arrange the tots in a tight, even layer in the waffle iron, fitting as many as you can. Close the waffle iron, pressing gently to flatten the tots, and cook until they are nicely browned and crispy all over, about 5 minutes. Serve with the candied bacon. TIMING TIP If you're planning ahead, let your tots thaw overnight in the refrigerator. If it's a game-time decision, no worries. Take your tots straight out of the freezer, spread them on a plate or baking sheet, and let them thaw at room temp for 20 minutes before proceeding. SUNDAY BEST FINESSE Although Tater Tot Waffles are amazing on their own (served with or without Candied Bacon), they're even better with all manner of toppings. Think smoked salmon and crème fraîche, or Sausage Gravy (page 23) and sautéed peppers. In fact, when entertaining, I often like to cut them into small squares to use as the base of elegant hors d'oeuvres. Reprinted from Sunday Best. In today's episode, chef and RD Allison Schaaf shares the only two pans she uses in her kitchen (plus a bonus!), and how to clean them. Nonstick pans contain chemicals that make them nonstick. If the nonstick coating starts to chip or degrade, that means it's getting into your food and you're ingesting it. Stainless Steel and Cast Iron pans last for a super long time and are safe to cook with. Stainless Steel: Calphalon is one good brand but there are other options out there too. Make sure there is no aluminum coating and go for pans that are as close as possible to being completely stainless steel. Always use oil or water to make sure the food doesn't stick. Keeping temperatures a little lower also helps avoid sticking. If something does stick, boil water and pour it in the pan right after cooking. Put the lid on and let it sit and then everything will come off easily! A sponge or dish brush is also useful. Cast Iron: Make sure your cast iron pan is well-oiled. The more you use it, the less care is needed. Pouring hot water on the pan works with cast iron as well if food does get stuck. You may need to buy a well fitting lid separately to help with cleaning. Avoid using soap on cast iron pans. A wire brush or a stainless steel sponge also work well for cast iron. Winner of the "Great American Baking Show" and self-taught baker Vallery Lomas shares her favorite holiday recipes, including some from her new book Life is What You Bake It.  This segment was guest-hosted by Kerry Nolan    Pecan Bundt Cake  Nonstick baking spray with flour 3 cups (375g) all-purpose flour 1 teaspoon baking powder 1 teaspoon kosher salt 1½ cups (3 sticks/339g) unsalted butter, room temperature 1½ cups (300g) packed light or dark brown sugar 4 large eggs 1 teaspoon vanilla extract 2 cups (240g) roughly chopped pecan pieces, toasted ¾ cup (180g) canned crushed pineapple, in its own juice ½ cup golden raisins   1. Preheat the oven to 325°F and place a rack in the middle of the oven. Spray a 12-cup Bundt pan with baking spray. 2. In a large bowl, combine the flour, baking powder, and salt. Whisk to combine. 3. In the bowl of a stand mixer fitted with the paddle attachment, beat the softened butter and brown sugar on medium speed until light and fluffy, about 4 minutes. 4. Add the eggs, one at a time, beating until each is incorporated before adding the next, about 2 minutes total. Add the vanilla. 5. Reduce the speed to low and add the flour mixture. Mix until just combined. Use a rubber spatula to scrape the bottom and sides of the bowl as needed. 6. Stir in the pecans, pineapple, and raisins. Pour into the prepared pan and bake until a cake tester inserted deep into the cake comes out completely clean, 1 hour to 1 hour 15 minutes. 7. Let the cake cool in the pan on a cooling rack for 10 minutes. Invert the pan to release the cake and allow the cake to cool completely before slicing and serving.   STORAGE This cake can be stored, covered, at room temperature for up to 1 week.   This recipe is excerpted from 'Life is What You Bake It' Courtesy of Clarkson Potter Publishers

Gluten-Free Orange Blossom Citrus Cake Time: 1 hour 45 minutesYield: One 8-inch (20 cm) cake; serves 8 to 12 There's nothing more satisfying than a recipe that uses a piece of produce in its entirety. A purée of boiled whole citrus is the base of this moist, flourless cake just lightly sweet and the perfect match for tea or a daytime snack. It is inspired by an ancient Sicilian recipe, a version of which I first encountered via cookbook author Claudia Roden. Make this recipe even easier (and less caloric) and skip the fruit topping. Cut a piece of parchment to line the bottom of your cake pan. Grease the pan, lay the parchment down into the base, and grease the parchment before adding the batter. Bake as instructed below. Serve the cake with powdered sugar and orange zest on top. 2 medium Valencia oranges1 large Meyer lemon2 teaspoons orange blossom water1 teaspoon vanilla extract5 large organic eggs¾ cup (150 g) granulated sugarNonstick cooking spray2⅓ cups (268 g) finely ground almond meal1 teaspoon baking powder¼ teaspoon kosher salt For the caramelized citrus upside-down topping: ¾ cup (165 g) firmly packed light brownsugar3 tablespoons unsalted butter, melted2 small pink or Meyer lemons, halvedlengthwise and sliced into half-moonsas thinly as possible 1. Scrub 2 Valencia oranges and 1 Meyer lemon and remove the stem ends of each. Boil in a medium pot of water for 30 to 45 minutes until easy to pierce with a fork. Add more water as the levels get low (the citrus will be bobbing in the water, not completely submerged). Preheat the oven to 400°F (204°C). Grease an 8-inch (20 cm) round cake pan. 2. Transfer the whole citrus to a blender with the vanilla and the orange blossom water. Purée until smooth (you should end up with about 1½ cups/375 g fruit purée). Allow to cool slightly, then add the eggs and granulated sugar and quickly blend on low speed until just combined. 3. In a separate bowl, combine the almond meal, bakingpowder, and salt. Whisk to incorporate. Slowly add the wet ingredients to the dry ingredients one-quarter at a time, folding to incorporate. Continue folding until the batter is smooth. Make the topping: 4. In a small bowl, mix together the brown sugar and the melted butter until fully incorporated into a paste. Scatter the mixture into the bottom of the prepared cake pan and press together using your fingers or a rubber spatula to form an even layer. Lay the sliced citrus in an overlapping fish-scale pattern on top of the sugar. 5. Pour the fruit batter over the top of the sugar and sliced citrus and settle it by tapping the side of the pan several times to eliminate air pockets. 6. Bake for 10 minutes on the center rack. Drop the temperature to 375°F (190°C) and continue to bake for an additional 45 minutes. The cake should be dark brown in color. While still warm, run a knife along the perimeter of the pan and place a serving plate on top of the cake. Invert the pan so the cake falls to the plate. Remove the pan. Allow the cake to cool for another 15 minutes before serving. If you have a baker's torch, you can use that to give the fruit topping some extra color in the center. Here's why a cast-iron skillet is the best thing you'll ever buy for your kitchen and the smartest investment you'll ever make in cookware.     What is a cast-iron skillet? A cast-iron skillet is made from molten metal that is poured into a cast that forms it into a one-piece pan. Cast-iron is made mostly from Iron ore that has a high carbon content. The only company still making cast-iron cookware in the U.S. today is Lodge Manufacturing in South Pittsburg, Tennessee. Cast-iron skillets are tried and true. Until World War II, the term "cast-iron skillet" was redundant, as every skillet was in fact made from cast-iron. In the 1960's, non-stick coatings entered the cookware scene and became all the rage, and by 2006, roughly 85% of skillets sold were "non-stick" Teflon. But concerns of toxicity from some non-stick pans has brought a new love for and appreciation of traditional cast iron.  Cook's today now see what cooks long ago already knew~a cast-iron skillet is the best skillet any cook can own. Cast iron has many advantages. Health benefits. Some healthful dietary iron leaches into food that is cooked in cast-iron. Nonstick properties. Well seasoned cast-iron is beautifully non-stick but without harmful coatings that might emit toxic chemicals. Inexpensive.  A good cast-iron skillet can be bought for as little as $20. It is a fraction of the cost of many other types of cookware. Durability. A well maintained cast-iron skillet will last a lifetime~or many lifetimes~and can stay in a family for generations. Versatility. Cast-iron skillets can go from stove to oven to table. They are freezer-friendly, and can also be used on an open fire (for campers). Cooking superiority. Many types of food just taste and look better when cooked in cast-iron (i.e. cornbread, fried chicken, sauteed vegetables). How to clean a cast-iron skillet. Remove stuck-on food with a spatula (metal is fine and won't harm cast-iron). Run hot water over the skillet. Scrub with a stiff natural or plastic brush. Kosher salt can be sprinkled in the skillet first for added scrubbing power. Rinse thoroughly and completely. Dry completely immediately after washing. Place skillet on the stove over low heat until all hints of moisture disappear and the skillet is completely dry (optional but optimal). With a clean cloth or paper towel, rub a light coating of oil on the entire inside surface of the skillet. With a clean cloth or paper towel, rub again to remove any traces of excess oil. Store the skillet in a dry place. Can you use dish soap to clean a cast-iron skillet? Although most "rules" say not to use dish soap, I use lightly sudsy water for heavy, fishy smells. An easy way to elminate most unpleasant odors that does not involve soap or suds is simple. Place the skillet in a 400 F oven for 15 minutes. This typically causes the smells to evaporate with the heat.   Should I buy seasoned or unseasoned cast-iron? If you inherit a cast-iron skillet from a family member, it will definitely be seasoned from years of use. I would highly recommend buying a pre-seasoned cast-iron skillet. Lodge pre-seasons all of its skillets, which is a huge plus.  What is the best cast-iron skillet you can buy? If you buy a cast-iron skillet, the best and only brand that I would recommend is Lodge. I love cast-iron and have an assortment of Lodge skillets in various sizes.  I link to the ones I have below as well as a few other options for various cooking needs. Be aware when scrolling on amazon that other brands will pop-up and appear to be Lodge. Make sure you are buying Lodge for the best product. What is the best size cast-iron skillet to buy? The size that I use most often is my 12" cast-iron skillet. Whether cooking for two or twenty, this is the skillet I most often use. For one, I like for my pan to be spacious so that food doesn't crowd. Another reason is that I like my cobblers, cornbread and such to be on the thinner side. A 10" skillet is probably the most common size cast-iron skillet, as it will do most large jobs and also be easier to pull out for smaller things like grilled cheese sandwiches. A few favorite cast-iron skillet recipes. Although I cook almost everything in my cast-iron skillet, there are a few favorite recipes that I make that are exclusive to a cast-iron skillet. In other words, they just wouldn't be the same cooked in anything else.  Easy Cajun sausage & vegetable one-skillet meal.  Mimi's Famous Skillet Blackberry Cobbler. Once you master this skill, you will significantly reduce time spent rejiggering, & improve the odds that dishes come out sparkly & clean. No water spots, residue, or broken items for you! ✔ Instructions: Scrape food off dishes & lightly rinse.Load sturdiest items (e.g., plates, non-stick pots) in the bottom rackLoad plates with soiled side facing inward & downPlace glasses, mugs, utensils, & dishwasher-safe plastics in the top rack using tines to evenly space & securely hold.  Load cutlery into rack or basket.Place XL items (e.g., cutting boards) upright along edges, so they don’t block inner dishes from getting hosed down.Add detergent. Run. 📝 Notes, Tips, Tricks: Loading:For cutlery, the best order is... disorder. (A metaphor for life? 🧐) When spoons "spoon," they block one another from water & detergent.Make sure sharp knives are pointing down. 🙅‍♀️🔪 → 🤚Load bowls at an angle to save space. Do not put these items in the dishwasher: wood, nonstick pots/pans, cast iron, insulated mugs/bottles, high-quality knives. Chef's knives must avoid the dishwasher — heat, detergent, & knocking other items will dull the edge. This makes them unsafe to chop with since they may slip. Nonstick is not dishwasher safe because the heat & detergent degrade the nonstick coating. This shortens pan life & also leads to flakes you might accidentally ingest.The less frequently you run the dishwasher, the more critical the rinse. Food-laden plates can mold if left to sit inside a dark, damp dishwasher.  The bottom rack is hotter than the top. Keep delicate items & plastic on top to avoid damage. Some dishwashers have safety racks. These help keep wine glasses secured in place so they don't bang other items & crack. Running:Light/Eco Mode saves energy & time. Regular Mode is typically wasteful & unnecessary. Only use dishwasher detergent—soap will overflow with suds. Too much detergent leaves a film. Rinse aid helps remove spots. It goes in a dedicated dispenser compartment or in a rinse-aid basket in the upper rack. To save on electricity, run the dishwasher at night, or use a cold cycle with an enzyme detergent (which doesn’t require heat) Many swear by the “wash at night, unload in the morning” routine. It ensures your dishwasher is ready for new additions during the day. Overcrowded dishwashers won’t clean as thoroughly since food & water can get trapped between items.Garbage disposals & dishwashers typically share plumbing. Make sure your drain is clear before hitting the “Start” button.Care:Smell your dishwasher every so often to make sure it doesn’t need cleaning. Cast iron has been my skillet of choice for many years now. There are only two things that get better with age in the kitchen. One is cast iron and the other is homemade sourdough starter! WHY CAST IRON IS BETTER THAN NONSTICK Reason #1, of course, is it doesn’t have all the bad stuff. Nonstick pans are coated with a carcinogenic chemical called perfluorooctanoic acid. Not only does it leech into the food when cooked at high temperatures, but also produces toxic fumes in the air. Not to be overly dramatic, but you need to get that stuff out of your house ASAP. Although the health concerns with nonstick was what drew me to using cast iron in the first place, the ease and beauty with which they cook kept me coming back for more. A perfectly fried egg, potatoes so crispy you can hear the crunch, a carmelized sear on a roast to seal in all those delicious juices…I mean, if you aren’t cooking with cast iron is it even cooking? Give me that 20 pound skillet that gets better with use every. single. time. If I go on vacation, and the condo has a flimsy nonstick and a plastic spatula, I cook like I have one hand. Each week we offer a few little tips and hints that will improve your cooking tremendously. This week it's all about cookware. Specifically non-stick cookware. We love our nonstick skillets but we only use them for certain things, like eggs. Nonstick isn't meant for everyday cooking. You shouldn't heat most non-stick surfaces up over 350 degrees, and even those that can go to 500 degrees won't work when you need to sear and brown a steak—you'll get your skillet up to 600 or higher for that purpose. And non-stick surfaces have a limited life span. They can be heated and cooled just so many times before they lose their slippery skill set. So save your non-stick pans for things that really need a nonstick surface, like eggs, pancakes, or even melting sugar. Then they'll work great and last for years.

If that sounds exhausting, that’s ok. 1 Thessalonians 3:13 also tells us that God will strengthen our hearts. Before açaí and goji berries became the “it” health foods, there was flax. The whole grain has been cultivated since 3000 B.C., when even the ancient Babylonians had an inkling that flax was nutritious, according to registered dietitian Samantha Heller. Thanks to modern science, we now know that flax possesses healthy omega-3 fatty acids and antioxidants. In particular, Heller explains that flax has alpha-linolenic acid, “a kind of omega-3 fatty acid that’s really healthy.” She adds that research has show that “it reduces internal inflammation, and it may help lower cholesterol. It’s good for your body, it’s heart healthy.” While all forms of flax — oil, seeds and ground flax meal — have the omega-3 fat, only the seeds have lignans, which are powerful antioxidents that researchers are finding may actually help reduce the risk of certain cancers.  “[It’s] certainly good for digestive health, high in fiber, as well,” said Heller. Not all omega-3 fatty acids are created equal, though, and she said that the ones found in fish have gotten a bit more attention from researchers. “It’s like you have motorcycles and there’s all different kinds of motorcycles—you’ve got Kawasakis, and you’ve got BMWs, and you have Harleys,” Heller said. “It’s the same thing with omega-3 fats, there’s many different kinds. And in fish, there’s two kinds, EPA and DHA, and these are the ones we really look at in terms of lowering triglycerides, and we’ve done a lot of research on those.” The different forms of flax also vary slightly in digestibility. Heller, the clinical nutrition coordinator for the Center for Cancer Care at Griffin Hospital in Connecticut, particularly recommends ground flax seeds, or flax meal, because it’s easier for the body to digest. “It [tastes] sort of wheat germ-like,” she said. “I put those in smoothies, in salads, in yogurt.” Flax oil also boasts healthful properties, but can’t be substituted for cooking oil because its a highly unsaturated fat. That means, it can turn rancid and should be kept in the refrigerator. “You can drizzle it on salads, you can even drizzle it on foods that are already cooked, you just won’t cook it in the pan like you would olive oil,” Heller noted. As for being on trend, flax does has the added benefit of being gluten-free. “Perhaps since people tend to be shying some of the wheat products, maybe that’s one of the reasons flax is becoming more popular,” she said. Below, try a recipe Heller recommends for muffins with flaxseed. Zucchini, Banana, and Flaxseed MuffinsAdapted from Martha Stewart,  Everyday Food, September 2011 Yield: 
Makes 12 Nonstick cooking spray 1 3/4 cups all-purpose flour (spooned and leveled) 1/2 cup ground flaxseed 1/2 cup lightly packed light-brown sugar 2 teaspoons baking soda 1 teaspoon baking powder 1/2 teaspoon coarse salt 1 teaspoon ground cinnamon 1 1/2 cups coarsely grated zucchini (from 1 large zucchini) 1/3 cup mashed ripe banana (from 1 large banana) 3/4 cup 1% milk or unsweetened soy milk 1 large egg, lightly beaten or flax* 1 teaspoon pure vanilla extract 1. Preheat oven to 350 degrees. Lightly coat 12 standard muffin cups with cooking spray. In a large bowl, whisk together flour, flaxseed, brown sugar, baking soda, baking powder, salt, and cinnamon. Add zucchini and banana and stir to combine. In a small bowl, whisk together milk, egg, and vanilla. Add milk mixture to flour mixture and stir until combined (do not overmix). 2. Divide batter among muffin cups. Bake until a toothpick inserted in center comes out clean, 20 to 25 minutes. Let muffins cool completely in pan on a wire rack, about 30 minutes. *Egg Substitution Instructions: For every egg being replaced, mix 1 tablespoon milled flax with
3 tablespoons water in a small bowl and let sit for one or two minutes. The mixture will become gel-like. Add to your recipe as you would an egg.  1 tablespoon milled flax + 3 tablespoons water = 1 egg *from Flax Council of Canada
