He's probably the best-known chef in the world when it comes to vegan dining. Matthew Kenney didn't start as someone you would expect to become a leader in the plant-based cooking field. That's because Matthew grew up in Maine, where fishing and hunting were a big part of his family's way of life. But many years ago, before most futurists and business speculators could see it - Matthew caught a vision of where the food industry was going and how plant-based cuisine would one day explode into the billion-dollar business it is today. His career is jaw-dropping for anyone who understands the food business's ins and outs, yet Matthew is still growing. He's planning more exciting things as plant-based cuisine and vegan products continue to grow in popularity. When Matthew first switched from including animal protein in his repertoire to exclusively plant-based cuisine, many of his colleagues thought he was crazy. At the same time, the food media stopped covering his work. Feeling alone and isolated, Matthew struggled through some highly lean years. Thankfully, he persevered, and his work contributed to the paradigm shift that we see today. Now, pretty much every restaurant offers at least a few vegan options. Meanwhile, vegan restaurants continue to multiply. Matthew takes us through his incredible journey during his conversation with host Wade T. Lightheart - who asks his usual probing questions to draw out Matthew's story and what makes him stand out enough to become famous as a plant-based chef. Not only is Matthew the world's leading chef of plant-based cuisines, but he is also the author of twelve books and a best-selling memoir. He is a culinary educator highly respected throughout the halls of all primary cooking schools. As a graduate of the French Culinary Institute, Matthew went on to work in upscale New York kitchens, opening up several of his restaurants along the east coast. His awards include being named one of America's Best New Chefs by Food & Wine Magazine. Matthew was also twice nominated as a Rising Star in America by the James Beard Foundation. This is what happened with Matthew. His love for food and wine intersected with his passion for health and environmentalism. Matthew didn't like how many of his tastiest dishes made him and others feel like crap the next day in his early days as a chef. As someone who wanted to achieve optimal wellness and nourish the environment, Matthew found a path that aligned good food, health, and environmental integrity. Matthew tells Wade at one point, “The chef's role is not only to feed and entertain but to nourish people and the environment. This is the most aligned path I have ever experienced. I have always been motivated by the fact that if I don't keep going, I'm not going to be able to share this with people and not show what can be done, to teach others how to do it...I'm lucky that I was able to stick it out.” Everything is creative. Matthew is a true polymath with many additional interests outside of food, including fashion, art, architecture, music, and writing. His brand has become multifaceted over the years, as his new clothing line is about to launch. The pandemic pushed his business into other creative areas. For example, Matthew's business creates a ton of content and recently produced a series of educational cooking videos for people to learn cooking skills online. The course was projected to receive a few hundred students. However, because of the lockdowns, more than 500 people signed up for the video course the first month. Matthew says, “We're always shifting our business model. Right now, 85% of our company's revenue is from restaurants. This will eventually flip upside down, and most of our revenue will be products and institutional food service, serving huge campuses with our patented know-how. Our system will be seeing significant demand in every sector - hospitals, schools, universities, corporate campuses, and so forth. We will see huge growth online with 60 different types of businesses like meal plans, frozen food, etc.” Wade is super excited to have Matthew visit his BioHome, as Wade has followed Matthew's career for years and loves to eat at one of Matthew's restaurants located just a couple of blocks from his house. Much talk around climate change focuses on mitigation, with far less attention paid to adaptation strategies. Matthew E. Khan, an Economics Professor at Johns Hopkins and Director of the 21st Centuries Cities Initiative, is a climate change adaptation optimist. His research focuses on urban and environmental economics. At the start of the year, he released two books, Unlocking The Potential of Post-Industrial Cities and Adapting to Climate Change. In this episode, Kurtis Lockhart sits down with Matthew to unpack some of the key themes in his books, along with other insights around urban governance and policies. We begin by hearing about the lack of imagination synonymous with climate change adaptation strategies and why policies that focus solely on carbon footprint emissions are misplaced. The mechanisms for each approach are essentially the same, but the buy-in and application are different. Matthew makes the case for adaptation, and we also get into the long-term thinking that this strategy requires. There are economic levers that can be used to deal with climate change which have a longer timeline. However, they are under-utilized, resulting in little to no sustained change. Matthew also talks about the value of competition and how it can make cities more efficient. Our wide-reaching conversation also touches on the place-based policies, the use of big data and how it can be leveraged to help people make decisions about where to live, why the poor have to be prioritized when it comes to climate change policies, and the importance of experimentation before policies are enacted. Decorating Dilemma Hi Jenny, First of all, thank you for including the floorplan—so helpful! This is a very generous width for a dining room so the sideboard is not going to throw off the room; there’s still plenty of room and no flow problem whatsoever. It’s not a floor to ceiling piece, so your eye will go right over it. I would put a big mirror over the sideboard to reflect the windows and the beautiful view. That will really open up the room. It’s really important to keep that chandelier centered with the windows so I would not touch that. The table centered in the room is the way to go. It’s good that you’re thinking about it now…but don’t overthink it! It’s actually a nicely designed floor plan and well proportioned; I wouldn’t play with that. You’re in good shape, Jenny! As he started to see more of the world, Matthew was always interested in both environmental and social issues and eventually put 2+2 together to realize that a life in organic farming combined outdoor physical work with a positive contribution to the planet. That led him to become an apprentice on Tablehurst Farm, UK in 1987. After working on many farms in many countries in many positions, Matthew ended up in Hungary in 1995. With colleagues, they set up the Open Garden Foundation (Matthew is the director) which was an organic training farm for Szent István University, Gödöllő, Hungary. The Open Garden (Nyitott Kert) became the first CSA in Hungary, starting in 1998, and continued through various transformations for many years. Matthew has worked as a grower and practical educator in Hungary for over 25 years and in 2010 together with friends set up Zsámboki Biokert. This is a small, commercial market garden running a webshop-based box scheme with a weekly stand also at the Budapest Organic Market. The bustling small farm also works to run programs which link the countryside with the city, and works in close cooperation with Cargonomia, the Budapest-based cargo-bike degrowth movement. Between 2016-2018 Matthew returned to England to work for Ruskin Mill Trust and set up a rooftop bio-intensive garden in the middle of Birmingham - providing food and education to young people with learning challenges. Lending in the real estate industry – as in any other field – requires a certain degree of communication between parties. Matthew Thurlow is the Executive Director of The Decorative Arts Trust, a non-profit national membership organization that promotes and fosters the appreciation and study of the decorative arts through domestic and international programming, collaborations and partnerships with museums and preservation organizations, and underwriting internships, research grants and scholarships for graduate students and young professionals. Prior to heading The Trust, Matthew served as Assistant Director of Development for Major Gifts and Planned Giving at Winterthur Museum; and was the Research Associate and Installations Coordinator in the American Wing at The Metropolitan Museum of Art. He holds graduate degrees from the University of Delaware’s Winterthur Program in Early American Culture and the College of William and Mary in Archaeology. Matthew lectures on topics relating to late 18th and early 19th century furniture, and has published articles in American Furniture, The Magazine Antiques and Antiques & Fine Arts. He was a co-author of the The Met’s exhibition catalog Duncan Phyfe: Master Cabinetmaker in New York. He serves on a number of advisory committees in the field, including the Colonial Williamsburg Art Museums Board, the Charleston Heritage Symposium, the New Orleans Antiques Forum and is chairman of the Classical Institute of the South, a New Orleans-based foundation conducting Museum of Early Southern Decorative Arts-inspired fieldwork in the Gulf South. In this episode, I interview Matthew Nordan, the Managing Director at Prime Impact Fund and the Co-Founder and Managing Partner of MNL Partners. Matthew also sits on numerous boards including Greentown Labs, Sense, and Quidnet Energy. As you may know from listening to Sarah Kearney’s episode, Prime Impact Fund is an early-stage venture capital fund focused on breakthrough climate innovation. Before Prime, Matthew was a venture capital investor at Venrock, one of the world’s oldest and most successful VC firms, where he and colleagues drove the firm’s investment in Nest Labs (acquired by Google for $3.2 billion). Prior to Venrock, Matthew was President of Lux Research (acquired by private equity firm Bregal Sagemount), an advisory services firm for science-driven innovation that he co-founded in 2004. Under Matthew’s leadership, the Lux Research analyst team became a globally recognized authority on the business impact of emerging technologies. Earlier, Matthew held a variety of senior management roles at emerging technology advisor Forrester Research (NASDAQ:FORR) in the U.S. and Europe. In addition to Prime, Matthew is co-founder and Managing Partner at MNL Partners, which develops energy and environmental projects in China. Matthew also co-founded and serves on the board of Prime Coalition, Prime Impact Fund’s non-profit parent organization. Matthew has testified before the U.S. Congress four times on emerging technology issues, was a founding member of the World Economic Forum’s Global Agenda Council on Emerging Technologies, and is a widely sought-after speaker and commentator.
