Find out how Armando and friends slaughtered and broke down a pig and made all kinds of pork delicacies over the span of one morning in his mother's garage. The delicious pork products they made included luscious sausages, head cheese and Lardo colonnata. The lardo Armando made was equally delicious but not IGP certified so couldn't carry the IGP name lardo colonnata. Nothing was left to go to waste and the final step was to cook up the remaining pork bones. The pork bones are typically served with another local Lunigiana dish, chestnut polenta. Mortadella lunigianese is another delicious local product they made, but quite different from the famous mortadella from Bologna. Nothing goes to waste! Nach und nach das restliche Mehl hinzufügen, bis die Konsistenz des Teigs richtig ist. Der Teig soll weder zu nass noch zu trocken sein. Nun etwa 10 Minuten warten und nach dieser Ruhezeit den Teig intensiv für 10-15 Minuten durchkneten. Es gibt eine Möglichkeit herauszufinden, ob der Teig die optimale Konsistenz hat. Reißt ein Stück vom fertigen Teig ab, nehmt es zwischen Daumen und Zeigefinger eurer beiden Hände und zieht es leicht auseinander. Reißt der Teig, ist er noch nicht, wie er sein sollte. Bildet sich eine Membran, durch die ihr fast hindurchschauen könnt, dann ist der Teig perfekt. Jetzt muss er 2 Stunden ruhen - und zwar unbedingt mit einem feuchten Handtuch abgedeckt, damit die Oberfläche nicht an- oder gar austrocknet. Nach der Ruhephase die Arbeitsfläche fein mit Semola abstäuben und den Teig daraufsetzen. In gleiche Stücke teilen. Alles zwischen 180-250 g geht in Neapel durch. Diese Stücke werden nun zu Kugeln mit glatten Oberflächen geformt und erneut auf eine bestäubte Arbeitsfläche gesetzt. Sie sollen ordentlich Spannung haben, dürfen also keine "offenen Stellen" mehr haben. Bitte ausreichend Abstand zwischen den Kugeln lassen. Wieder mit einem feuchten Handtuch bedecken und weitere 5 Stunden gehen lassen. Belag: Pizzateig ausziehen mit den Zinken einer Gabel mehrfach einstechen und im heißen Ofen backen. Sobald ihr ihn fertig gebacken aus dem Ofen holt, mit wirklich hauchdünnem Lardo belegen. Der feine Speck schmilzt, wird sofort durchsichtig, sodass man glaubt, die Pizza komme ohne Belag, dafür glänzt und duftet sie wunderbar. Der Geschmack dieser aus den norditalienischen Marmorsteinbrüchen stammenden Delikatesse namens Lardo Colonato ist vollständig in den Teig eingedrungen. A group of popular Portland restaurants will open new locations in the suburbs. That includes places like St. Jack, Grassa, Lardo, as well as Oven and Shaker.The ChefSable group will start takeout at a new Lake Oswego location in April, with an official opening for seating in June.The restaurant owners said people in the suburbs appear to be less cautious about going out. Road trip! The first week of September we visited the Cinque Terre for the first time, along with Carrara and Lucca. We share our favorites - focaccia, beach and the best way to see the famed five villages (hint it's not hiking!) As usual our travels revolve around food and the real objective to our stop in Carrara was for the local lard! Once back home we have been prepping early for winter plus a fish feast with Gaggi & his hunting buddy as a preemptive thank you for their morning coffees during the hunting season. Following an externship at Aqua in San Francisco, Rick graduated and returned to Todd English’s Olives. After four years as sous chef at Olives, Rick worked at both Rubicon and One Market restaurants in San Francisco. He returned to the east coast to open Miramar Restaurant in Westport, Connecticut and two years later, Olives Restaurant in the W Hotel in New York City.After three years in New York City, Rick, his wife Sheila and his two sons, Luke and Miles, moved to Vermont. Rick became the Chef at the Inn at Shelburne Farms, located on the 1400 acre non-profit environmental education center and working farm on Lake Champlain in Shelburne, Vermont.In 2009, drawn by the unique food culture, Rick and his family moved to Portland. Rick opened Lardo as a food cart in September 2010 after deciding it was the best way to get to know Portland and for Portland to get to know him. In this episode Steven Shomler visits with Jacob Grier-- Acclaimed Bartender, Author of Cocktails on Tap: The Art of Mixing Spirits and Beer, and Founder of Aquavit Week. During his visit Jacob tells us what Aquavit is, talks about some of his favorite Aquavit cocktails, and shares where in Portland you can get an excellent Aquavit cocktail including Broder, The Bit House Saloon, Expatriate, La Mule, The Multnomah Whiskey Library, and Wayfinder. Steven and Jacob then talk about the 2016 edition of Aquavit Week. The Portland edition runs December 4-10. “Aquavit Week is a celebration of the classic Scandinavian spirit, whether distilled in Europe or elsewhere, served neat or in cocktails. Founded in 2012, Aquavit Week returns in its fifth year.” During the discussion about Aquavit Week Jacob talks about some the distilleries making Aquavit here in Portland Including House Spirits Distillery, Bull Run Distillery, and Rolling River Spirits. Toward the end of this episode they enjoy some Aquavit and Steven tells Jacob about the Beef on Weck – a sandwich popular in western New York that is served on kummelweck roll – a roll is topped with kosher salt and caraway seeds. One Fun Note -- Following the recording of this Podcast, the Beef on Weck tangent led to a phone call, which resulted in Lardo being part of 2016 Portland Aquavit Week.
