Nutrition Nugget! Bite-sized bonus episodes offer tips, tricks and approachable science. This week, Jenn is talking about frozen vegetables. With a summer Cyclospora scare putting salad greens on trial, is the humble freezer aisle the safer, smarter choice? Jenn breaks down exactly how frozen veggies are harvested, blanched, and locked in at peak nutrition, and whether that process really does more to protect you than your fresh produce drawer. She also tackles the critics head-on: are frozen vegetables "processed," do they lose flavor and texture, and is fresh really always more nutritious? The catch is in how you cook them, and one wrong move could turn a nutrient-packed shortcut into a mushy, flavorless mistake. Jenn weighs both sides before landing on her verdict about whether frozen vegetables a permanent spot in your healthy eating routine. Like what you're hearing? Organic, Conventional, or Homegrown: What the Research Really Shows About Nutrition - Ep. 313

Just Grow Something | A Gardening Podcast

You've probably heard both sides of this argument: that organic and conventional produce are nutritionally identical, and that homegrown vegetables blow store-bought out of the water. Which one is true? In this episode, I dig through the peer-reviewed research on three separate questions: whether organic farming produces more nutritious food, whether soil health itself changes the nutrient content of what we eat, and what happens to those nutrients in the days between harvest and the moment food lands on your plate. I'm treating this as a real meta-analysis, pulling together findings from major systematic reviews, long-term field trials, and postharvest storage studies, and following the data wherever it leads. The answer is more interesting, and more useful for your own garden, than either side of the argument usually admits. By the end, you'll know exactly which parts of the nutrient-density conversation hold up under scrutiny and which parts are oversimplified, plus what it means for the food coming out of your own backyard. Dr. Isaac Harris is an Associate Professor in the Department of Biochemistry and Biomolecular Sciences and the Center for Discovery in Cancer Research at McMaster University. Isaac's research examines the roles of antioxidants in health and disease, including how they are produced and used in cells. He is particularly interested in how cancer cells rely on antioxidant pathways to survive and grow. Isaac is working to understand why high-dose antioxidant supplements may sometimes promote cancer rather than prevent it, and whether blocking cancer cells' natural antioxidant systems could slow tumor growth. When he's not working, Isaac enjoys spending time with his wife and five-year-old daughter, doing things like coloring, playing outside, visiting the park, or eating ice cream. He also likes cooking, reading, relaxing, watching TV, and introducing his daughter to some of his favorite childhood shows like The Simpsons. He received his bachelor's of engineering degree in chemical engineering and PhD in molecular biology from the University of Toronto. Next, he conducted postdoctoral research at Harvard medical school before joining the faculty at the University of Rochester and Wilmot Cancer Institute in 2019. In 2024, he was awarded the Wilmot Community Outreach and Engagement (COE) Innovator Award. He very recently moved his lab and joined the faculty McMaster University. In this interview, Isaac shares more about his life and research.

"Farming in a way that's good for the health of the consumer and good for the product is also good for the environment. And so everybody wins, and then our consumer wins." —Andrew Salisbury  Coffee health benefits aren't just marketing; they're backed by nearly 30,000 studies, yet almost none of that research made it into the bag of coffee sitting in your kitchen.  In this episode of Essential Ingredients, Justine Reichman talks with Andrew Salisbury, founder of Purity Coffee, about the personal frustration that led him to rebuild coffee from the soil up. It started with his wife's low energy and a stubborn question: was her daily coffee helping or hurting? That question sent Andrew to two coffee scientists at Vanderbilt, who handed him a list of health benefits tied to coffee — and a gap no company was filling.  Andrew explains why coffee is actually the number one source of antioxidants in the American diet, ahead of blueberries and kale, and why most companies stop at "avoiding the bad stuff" instead of maximizing the good. He walks through Purity's three-level testing process — bean, soil, and now the body — and explains why regenerative, shade-grown farming produces higher yields and more antioxidants than industrial methods, while also sequestering carbon rather than releasing it. The conversation moves from roast curves and chlorogenic acids to the real economics of paying farmers a premium, and why climate change is expected to cut Arabica coffee supply in half by 2035.  This is a conversation about what happens when a company refuses to accept "that's just how it's done." Listen to the full episode to hear how one entrepreneur is trying to make your daily cup a genuine act of health: https://podcasts.apple.com/us/podcast/essential-ingredients-podcast/id1534417325   Meet Andrew:  Andrew Salisbury is the founder and CEO of Purity Coffee, a specialty coffee company built on a simple but radical premise: every decision from farm to cup should be made for human health first. After investigating his wife's low energy and digging into research at the Institute for Coffee Studies at Vanderbilt, Andrew discovered that coffee is the number one source of antioxidants in the American diet—and that no brand was optimizing coffee specifically for health. Partnering with leading coffee researcher Professor Adriana Farah, Andrew spent 18 months developing Purity's approach: shade-grown, regeneratively farmed, organic coffee that is independently lab-tested to minimize mold, mycotoxins, pesticides, and heavy metals while maximizing antioxidants and polyphenols. Through Purity Coffee and the emerging concept of "circular health coffee," Andrew is helping reshape how the industry thinks about regenerative agriculture, soil health, and clean sourcing, proving that what's best for the drinker can also be best for farmers and the planet. In the first half of a two-part episode on midlife skin, Dr. Mary Alice Mina breaks down the biology behind one of the most alarming stats in dermatology: women can lose up to 30% of their skin's collagen in the first five years after menopause. She explains why collagen decline actually starts as early as your 20s (about 1% a year), why estrogen loss accelerates that process dramatically at menopause, and why "collagen banking" earlier in life matters so much. Rather than jumping straight to products and procedures, Dr. Mina makes the case that skincare is whole-body care — walking through the inside-out factors that most directly affect collagen: protein intake (including how much you actually need and why vegetarian/vegan diets make it harder), sugar and glycation (AGEs), anti-inflammatory fats, antioxidants, hydration, and whether collagen supplements are actually worth taking. Welcome to a most informative and inspiring show about the amazing ancient superfood of cacao! This episode will give you everything you need to know about its remarkable health benefits, healing properties, and how to choose the most sustainable, eco-friendly, fair-trade bean-to-bar products. You will learn about the fascinating history of cacao as a sacred food, currency, and medicine, why it remains one of the most highly regarded superfoods on the planet, and how the food industry took this extraordinary raw material, stripped out everything useful, and transformed it into little more than a heavily sugared version of the original. Along the way, I explain the science in plain English—from the powerful polyphenols that support your heart, brain, blood pressure, gut microbiome, metabolism, and mood, to why cacao may be the single most antioxidant-rich food you can eat. I also reveal the disturbing reality behind much of today's commercial chocolate industry, including how mainstream processing destroys many of cacao's most valuable compounds and why ethical sourcing matters. You'll learn the difference between raw cacao powder, cacao nibs, and high-percentage dark chocolate, how to identify truly high-quality bean-to-bar chocolate, why I became a dark chocolate connoisseur, and the artisan brands I recommend. When this episode is over, you're never going to look at a chocolate bar the same way again, and you'll be fully armed to make the best product purchasing decisions and obtain the maximum benefits from consuming foods high in nutritious cacao. TIMESTAMPS: Cacao is one of the most highly regarded superfoods on the planet. [00:56] When you are finished listening to this episode, you will never look at a chocolate bar the same way again. [02:28] The best way to enjoy chocolate is to put it on your tongue and allow the flavor to dissolve in your mouth. [06:38] The history of cacao is fascinating. It is one of the most nutrient dense, biologically active foods in all of human history. [08:10] Early civilationa learned to ferment, roast, and grind cacao beans into a drink. It was more than a flavoring agent, it was very much a spriitual centerpiece as well as used for medicinal purposes. [10:11] After the Europeans added sugar to cacao, it lost some of its medicinal purpose, although it still is a good source of antioxidants. [12:29] There are many cardiovascular benefits from cacao. It improves platelet function. [18:17] Cacao has been shown in studies to produce meaningful reductions in both systolic and diastolic blood pressure. It is also known to help boost levels of HDL (high density lipoproteins.) [20:55] Cacao consumption improves your overall lipid profiles, including helping with healthy triglyceride levels. [27:24] Does cacao help with weight loss goals? [28:27] Cacao has an impact on brain function and mood. [31:37] In contrast to the powerful, hard and fast effects of caffeine, theobromine in cacao works more slowly. It has a gentler mechanism and a longer half life. [35:08] Studies show wonderful benefits from cacao on the gut. It has been identified as a potent prebiotic which is what feed probiotics to flourish in the intestinal tract. [38:59] Reasearch shows cacao has properties protecting you from UV damage from sunburn. [46:35] Just how damaging to health is mainstream modern chocolate processing? One of the terrible aspects of the low-priced chocolate is because of the support of child slave labor harvesting these beans. [50:02] Look for the designation of "bean to bar" on the product. It should also have cacao beans as the first ingredient. [55:05] In mainstream processing of the beans, they have to use super high temperatures which degrades the polyphenol. [57:17] There are three categories of products which can deliver these wonderful health benefits. [01:00:07] When the bar is above 80%, this is where most of the research showing cardiovascular cognitive benefits was conducted. The words "cacao beans" should be the first ingredient on the label. [01:05:53] Brad lists his recommendations for good chocolate bars. [01:19:44] How much chocolate should one consume? [[01:29:06] Do not refrigerate high quality dark chocolate. You're not depressed. You're not in crisis. You're functioning, showing up, holding it all together. But something is still off, and you can't quite name it.This episode is for that person.Brandi and Dr. Desiree Caruso, ND sit down to break down the real biology behind low-grade mood dysregulation — the kind that doesn't show up in standard bloodwork but is absolutely happening in your body. We're talking about two specific functional mushrooms, lion's mane and reishi, and going straight into the mechanisms: the actual compounds, the actual pathways, and the actual research that explains why these mushrooms have a genuine relationship with how you feel. This is not a vibe episode. This is the science. We've been asked over and over again whether functional mushrooms can do something for mood, and if so, how. Today we answer that question properly. If you've ever walked out of a doctor's appointment feeling dismissed — told everything looks normal, maybe it's stress, maybe it's your age — this episode is what comes next. What you'll learn:Why mood is a physiological state, not just a feeling, and what that means for how you address itThe specific terpenoid compounds in lion's mane (hericenones) that can cross the blood-brain barrier and what they do once they get thereWhy BDNF is the mechanism most antidepressants are thought to work through, and how lion's mane stimulates it directlyHow 90% of your serotonin is produced in your gut, and exactly how lion's mane supports that pathwayThe three-directional approach lion's mane takes: blood-brain barrier, neuroinflammation, and gut-brain axis simultaneouslyWhat the HPA axis is, why chronic stress dysregulates it, and how reishi's ganoderic acids help restore the natural cortisol rhythmReishi's relationship with GABA, the brain's calming neurotransmitter, and why that explains the felt sense of settling downThe 2026 randomized controlled trial showing measurable reductions in anxiety, cortisol, and inflammation at 12 weeksHow disrupted sleep literally changes how your brain processes emotional information, and the two specific mechanisms reishi addresses to help with thatHow to self-diagnose which mushroom fits your experience right now, and what to track over four weeks to know whether it's workingResources Mentioned:Dr. Andrew Huberman episode on adenosine and coffee: https://www.hubermanlab.com/episode/using-caffeine-to-optimize-mental-and-physical-performanceVigna, L. et al. Today, Professor Robin May, a leading microbiologist and the UK Government's Chief Scientific Officer, explores why our interest in mushrooms has exploded. He explains why they are not just another vegetable but could hold the key to better gut health, brain health, immune health, and lower cholesterol. By the end of the episode, you'll know which health claims about mushrooms are real, which are exaggerated and where the science is just too early to trust. You'll have a solid understanding of what mushrooms are really doing inside our bodies and how to unlock the secret health powers they hold. You do the work. You train, you sleep, you eat well, you manage stress. And yet your joints still ache, recovery takes longer, and something just feels harder than it used to.I sit down with David Watumull, co-founder and CEO of AX3, to talk about astaxanthin, a naturally occurring antioxidant he has spent his entire career studying, one that most people have never heard of despite having more than 4,000 peer-reviewed papers and 100 human clinical trials behind it.This is not a conversation about the latest wellness trend. It's a deep look at the science of oxidative stress, chronic inflammation, and what actually happens inside your cells when the damage accumulates faster than your body can repair it.What we explore:- Why astaxanthin is categorically different from vitamins C and E, and how it works at every layer of the cell without ever becoming pro-oxidant.- How chronic inflammation starts with oxidative stress upstream, and why blocking it at the source is safer than suppressing the immune response after the fact.- Why this ingredient was one of only five agents in a 20-year NIH-funded program to extend mammalian lifespan by over 10 percent while also showing health span benefits.- How astaxanthin protects joints, muscles, and mitochondrial energy production, and what the data on competitive cyclists actually demonstrates.- What to look for in a supplement, why bioavailability determines whether you absorb anything at all, and how to build astaxanthin into a foundational daily stack.Chapters: 00:00 Intro03:30 Why Astaxanthin Isn't Like Other Antioxidants07:14 The Algae Origins of Astaxanthin11:22 Salmon, the Food Chain, and Nature's Design15:00 From Pharma Research to Supplement18:21 The NIH Longevity Study Explained23:15 mTOR, FOXO3, and the Aging Pathways29:10 Safe Anti-Inflammatory for Joints and Athletes35:15 Brain Protection and the Blood-Brain Barrier38:02 Skin Health and Sun Damage from the Inside45:00 Redox Balance and Liver Protection48:35 Mitochondria, Energy, and Endurance Performance53:00 How to Stack Astaxanthin with Other Supplements57:10 Dosing, Bioavailability, and What Sets AX3 Apart01:07:00 Why David Watumull Went All-In on One IngredientAbout David Watumull:David Watumull is the co-founder and CEO of AX3, a supplement company built on more than two decades of astaxanthin research. He was introduced to the ingredient as a teenager working on algae ponds on the Big Island of Hawaii, and has spent his career advancing its science through pharmaceutical-grade manufacturing, NIH-funded longevity studies, and peer-reviewed cardiovascular research. The Future of Everything presented by Stanford Engineering

Fungi are “nature's biological recycling machines,” says guest Vayu Hill-Maini, a former chef turned bioengineer. That is, they take waste and turn it into good things. Hill-Maini now melds his scientific and culinary skills to create new foods, but also medicines, faux leather, pigments and other valuable products from mushrooms and molds. He uses CRISPR gene editing technology to “domesticate” these fungi – removing off-flavors and increasing nutritional content to make new-age cheeses, burgers, salami, and more. “We call it the DBTL cycle – design, build, taste, learn,” Hill-Maini tells host Russ Altman about his creative process on this episode of Stanford Engineering's The Future of Everything podcast. What if two of the most ordinary things in your life, your cell phone and your tap water, were interacting inside your body in ways no one has ever fully explained before? In this eye-opening solo episode, Darin breaks down emerging research showing that wireless radiation and industrial toxins like chromium-6 may work together inside the body, creating a level of cellular stress and DNA damage far greater than either exposure alone. This isn't about fear, it's about awareness. Because for the first time, we're starting to understand that modern life isn't about isolated exposures… it's about combined effects happening simultaneously. From the shocking reality of contaminated water supplies to the invisible EMF environment we live in daily, Darin connects the dots between science, lifestyle, and practical action. Most importantly, he gives you a clear roadmap for reducing your exposure and strengthening your body's natural defenses, so you can live powerfully within the modern world, without being silently impacted by it.     What You'll Learn Why modern health risks are not isolated—but compounded through multiple exposures The surprising connection between cell phone radiation and chromium-6 What new research reveals about synergistic DNA damage inside cells Why current safety standards may not reflect real-world conditions How widespread chromium-6 contamination is in modern water systems The concept of "toxic load" and how it builds over time Why your body can repair damage—but only up to a certain threshold The importance of reducing exposure instead of chasing perfection How EMFs impact cellular stress responses and long-term health Practical strategies to reduce your exposure starting today     Chapters 00:00:00 – Welcome to SuperLife and the mission of building a healthier world 00:00:33 – Sponsor: the truth about NAD+ supplements and quality verification 00:02:17 – Setting intention: breathwork and grounding into the episode 00:03:08 – Introducing today's topic: cell phones, tap water, and hidden health risks 00:03:54 – New research reveals unexpected interactions inside the body 00:04:35 – How wireless radiation and chromium-6 combine inside cells 00:05:17 – Inside the Bioelectromagnetics Lab and what researchers tested 00:06:01 – Key finding: isolated exposure vs combined exposure 00:06:50 – Why "1 + 1" doesn't equal 2 in biological systems 00:07:43 – DNA fragmentation and what it means for long-term health 00:08:21 – Why current safety standards may be incomplete 00:09:01 – What chromium-6 actually is and why it matters 00:09:56 – The Erin Brockovich connection and why this is bigger than one case 00:10:09 – 200 million Americans exposed through drinking water 00:10:57 – How chromium-6 enters water systems 00:11:30 – The lack of federal regulation and what that means 00:12:00 – Why this isn't about panic: it's about awareness 00:12:37 – Chronic low-level exposure vs acute exposure 00:13:00 – Your body's repair systems—and when they get overwhelmed 00:13:11 – Sponsor: non-toxic cookware and reducing toxic exposure 00:15:01 – Introducing your "Digital Hygiene Protocol" 00:15:40 – Step 1: Creating an EMF-free sleep environment 00:16:30 – Why sleep is critical for DNA repair 00:16:58 – Step 2: Distance as your greatest protection 00:17:30 – Why proximity to your phone matters more than you think 00:18:03 – Eliminating Bluetooth exposure and switching to wired options 00:18:36 – Hardwiring your home and reducing Wi-Fi exposure 00:19:05 – Why earbuds and constant proximity increase risk 00:19:30 – Step 3: Filtering your water to remove chromium-6 00:20:00 – Reverse osmosis and why it matters 00:20:22 – Supporting your body's defense systems through nutrition 00:20:45 – Antioxidants, minerals, and detox support 00:21:10 – Adaptogens and strengthening resilience 00:21:30 – Final perspective: technology isn't the enemy—misuse is 00:22:00 – The concept of the "multi-stressor environment" 00:22:20 – Empowerment over fear: what you can control today 00:22:36 – Closing thoughts and invitation to share the message     Thank You to Our Sponsors: Our Place – Non-toxic cookware that keeps harmful chemicals out of your food. It's not just what you're exposed to, it's how those exposures interact inside your body over time. The good news is, you don't need to eliminate everything—you just need to reduce the load. And every small, intentional choice you make moves your biology back toward balance."     Bibliography/Sources Primary Scientific Study Zhu, Y., Zhu, L., Lan, Y., Sun, C., & Chen, G. (2026).
