Eine live aufgezeichnete Folge vom SWR Podcastfestival in Mannheim: Zu Gast ist Koch und Hotelier Johannes Nicolay, der im Leben oft originelle Wege ging. 2012 hatte er die tolle Idee, den 130 Jahre alten Familienbetrieb auf vegan umzustellen. Damals konnten sich viele noch nicht vorstellen, komplett tierfrei zu essen, geschweige denn, vegan zu leben. Seine Idee kostete 3.500 Stammgäste und nicht nur einmal hörte er: „Du treibst uns in den Ruin“. Mit 16 hat Johannes keinen Bock mehr auf seinen verkorksten Französisch-Lehrer. Er bewirbt sich mit einer gemalten Bewerbung bei einem Freiburger Hotel und bekommt eine Lehrstelle in der Sterne-Gastronomie. Die Arbeit ist hart, der Lebenstil ungesund, doch er ist stolz auf sein Schaffen. Als Sternekoch arbeitet er in Top-Restaurants, bildet sich weiter und wird Küchenchef und später Geschäftsführer im Hotel der Eltern, das in fünfter Generation besteht. Druck und Verantwortung sind hoch, er trinkt zu viel Alkohol, leidet an Allergien und wird zum typischen Arschloch-Chef. Eines Tages verweigert eine Praktikantin ihm, einen Milchkaffee zu machen, weil sie Veganerin ist. Ein unerwarteter Wendepunkt. Mit Nina, Roman und Maximilian spricht er offen über Lebenskrisen, Drogenkonsum in der Gastrobranche und sein fundamentales Umdenken in Sachen Tierleid. Nach vier höllischen Anfangsjahren mit seinem veganen Sterne-Restaurant und einem überstandenen Herzinfarkt, hatte er vor 2 Jahren das erste Mal mehr Gäste, als seine Eltern jemals zuvor. Er kann heute sagen, dass seine Idee gut war. Auch in den schlimmsten Tagen war er sich sicher, dass es richtig ist, was er tut. Mittlerweile kommen Gäste aus der ganzen Welt. Zu Gast sind Sophie Lehmann und Thomas Imbusch vom Gourmetrestaurant 100/200 Kitchen in Hamburg. Aktuell feiern sie mit dem 100/200 fünfjähriges Jubiläum. Ich selbst war zum ersten Mal für einen Podcast vor 4 Jahren dort und habe damals mit Thomas Imbusch über seine Pläne, über seine Ideologie und seine Ideen gesprochen. Jetzt wollte ich wissen, was haben Sie davon realisieren können und sind sie Ihrer Positionierung treu geblieben. Wir wissen natürlich, es waren schwere Zeiten, denn es gab pandemiebedingte Schließungen, und das hat es natürlich nahezu unmöglich gemacht die gesteckten Ziele zu erreichen. Doch Erfolge konnten sie trotzdem verbuchen, so schmücken das 100/200 mittlerweile 2 Michelin-Sterne und sie wurden in die Liste der World 50 Top Restaurants aufgenommen. Stolz sind sie aber auch darauf, wie sie ihr Unternehmen strukturiert und Prozesse optimiert haben, das die Gäste ihre Philosophie angenommen haben und sie bei vielen Ideen und Konzepten eine Vorreiterrolle eingenommen haben. Ob Ticketvorverkauf, Nose-to-Tail, ein rein vegetarisches Menü, Weine abseits des Mainstreams oder eine eigens initierte Academy zur Aus- und Fortbildung von Gastrotalenten, sie haben Akzente gesetzt und wollen es auch weiterhin tun. Vieles Neues ist in dem 5-jährigen Bestehen des 100/200 entwickelt worden und gereift. Sophie Lehmann und Thomas Imbusch, die auch privat ein Team sind, haben ihre eigene Vision von der gehobenen Gastronomie weiter entwickelt und sind stolz darauf ihre Rolle als innovative Gastro-Unternehmer auszufüllen. Dazu gehört die perfekte Menügestaltung, genauso wie das Führen der Mitarbeiter, die permanente Prozessoptimierung, der Austausch mit Liferanten und Erzeugern sowie die Kommunikation mit den Gästen, um nur einiges zu nennen. Sie wissen das sie mit ihren Ansichten und Ideen öfter mal anecken und provozieren, aber genau das macht es wohl aus, wenn man etwas bewegen will. After attending the Baking and Pastry Program at Chicago’s Kendall College, Jenny McCoy landed positions in a variety of Chicago’s top restaurants, including Charlie Trotter’s, Blackbird, Gordon and Bittersweet Bakery. It was in these kitchens where Jenny learned to refine her palate and develop her talent for composing seasonal desserts. Following her formative experiences in fine dining, Jenny took a brief hiatus from professional baking to travel and complete a BA in Food Writing at DePaul University. When Jenny returned to the pastry kitchen, she oversaw three restaurant pastry departments for Emeril Lagasse, as well as contribute weekly to the Cooking Blog at Emerils.com. While working at Emeril's Delmonico, Jenny was a nominee for the PastryScoop.com Best Dessert Menu Award in 2006. It wasn’t long, however, before she felt the pull of New York City’s vibrant culinary scene. In New York, she headed the pastry departments of top restaurant including Marc Forgione, A Voce and Tom Colicchio’s Craft, which earned three stars from The New York Times during her tenure. Jenny was also a pastry instructor at the Institute of Culinary Education in New York from 2010 to 1018, and is the author of Desserts for Every Season (Rizzoli, 2013) and Modern Eclairs (HMH, 2016). Jenny’s newest venture is Recette, a bakery that sells handmade pastries such as French canelés at farmers’ markets and occasional pop-ups in Chicago. Wir verkaufen immer. Ob in der Familie, als Kunde, im Büro oder im Vertrieb. Im Podcast Die Extrameile zeigt Walter Schmidt, wie das mit Spaß authentisch zu erlernen ist. Auch die Jahre danach in Top-Restaurants mit französischen Speisekarten. Erweitert mit italienischen Trends, Ausflug in die Gemeinschaftsgastronomie – also Großkantine, Spanien, genauer Ibiza, dann wieder München. Freundin mit „normalen“ Arbeitszeiten kennengelernt und Köche, die besser waren. Nach ersten Sinnfragen der Entschluss, in den Handel zu gehen. Kurz darauf Selbständigkeit im Großhandel für die Gastronomie. Nach ein paar Jahren Fusion und dann Verkauf. Wieder Zeit der Sinnfrage mit Neuausrichtung. Harte Zeit. Start im B:C mit Direktwerbung, sprich Klingeldrücken für Verkauf von Tiefkühlprodukten an der Haustür. Dann Verkauf und Vertriebsleitung in einem Bezirk. Weiter ins B:B Geschäft wieder mit Top-Convenience-Produkten und das seit nun über 12 Jahren. Dabei Vertriebs-Erfahrungen mit Unternehmen. Also Gewerbe, Hotels und Kantinen. Jetzt auch Einrichtungen wie Kindertagesstätten und Seniorheimen etc.  Sicherheitstechnik interessiert mich und installiere ich seit über 15 Jahren.  Und das Wort Sicherheit ist mir soooo wichtig: in dem was ich verkaufe und weitergebe: Sicherheit für meine Kunden in kulinarischen Angelegenheiten, Sicherheit für zuhause in Form eines innovativem Alarmsystems, und Sicherheit in der Rhetorik beim Verkauf. Gründe für: Warum der Podcast Die-Extrameile?  Weil es guttut, die extrameile zu gehen.  Weil es spannend und fordernd ist.  Weil es ausserhalb der Komfortzone ist.  Weil es ein weiteres Learning ist. Weil es zu testen gilt, ob die Formeln passen.  Weil es mir versprochen ist.    Es gibt nicht den Anspruch, perfekt zu sein. Wie nichts in meinem Leben. Und in eurem Leben. Das ist auch gut so. Wunder Dich nicht, es passiert scheinbar nichts. Der letzte Teil unseres Roadtrips über Neuseelands Nordinsel führt uns von Taupo am Lake Taupo bis an die Südspitze in die Hauptstadt Wellington. Fast etwas wehmütig schauen wir an den letzten Tagen unserer Reise während der Fahrt aus dem Fenster. Trotzdem kam uns der gesamte Roadtrip länger vor, weil wir so viele verschiedene Orte, Seen, Flüsse, Strände und zwei Ozeane gesehen haben. Wir sind vom nordwestlichsten Punkt Cape Reinga bis zum südlichsten Punkt Wellington gefahren, haben zahlreiche Urlauber, Backpacker, Aussteiger, Hippies, Lebenskünstler, Straßenmusiker und noch viel mehr beeindruckende Menschen getroffen.Unser Fazit: Wir kommen auf jeden Fall wieder und dann mit viel mehr Zeit im Gepäck Taupo am Lake TaupoTaupo ist ein traumhafter Ort am größten Kratersee Neuseelands, der vor etwa 2.000 Jahren wegen eines Vulkanausbruchs entstanden ist. Das Städtchen ist perfekt für einen gechillten Tag am See. Du kannst dort auch in vielen kleinen Läden Souvenirs kaufen, sehr gut essen gehen und in der Umgebung extrem viel machen. Wir waren zum Beispiel bei den Craters of the Moon, einer mondartigen Landschaft und den Huka Falls, der meistbesuchten Attraktion Neuseelands. Beides liegt gerade einmal zwei Kilometer nördlich von Taupo.Taumata – der Hügel mit dem längsten Namen der WeltDort hatten wir einen kleinen Zwischenstopp und ich glaube, dass jeder Neuseeland-Tourist da mal vorbeifährt und versucht, den Namen vorzulesen. Wie viele Buchstaben er hat, kannst du raten, wenn du den Beitrag gehört hast. Aber nicht schummeln und vorher googeln Wir sagen einfach Taumata. So wird der Name abgekürzt und das ist ja auch viel leichter.Wellington, die coolste kleine Hauptstadt der WeltSo wird Wellington völlig zu Recht genannt. Die Hauptstadt Neuseelands vereint alternativen Lebensstil mit vielen modernen Plätzen und Orten in der Stadt. Du findest ganz viel Action und Trubel und genauso Ruhe und Frieden. Nur zehn Minuten von der City bist du mit dem Auto schon am Meer. Urige Irish Pubs stehen neben modernen Gebäuden. Top-Restaurants findest du neben einem riesigen Food Court. Wenn du in Wellington bist, gehe ganz unbedingt ins Te Papa Museum. Hier erfährst du alles über Neuseelands Geschichte, über die Flora und Fauna und noch eine ganze Menge mehr. Und wenn du wie wir mit einem Sieben-Meter-Campervan reist, erkundige dich schon vorher nach einem geeigneten Parkplatz. Wellingtons Straßen sind recht eng. Dennoch ist die Stadt ein Traum und die Nacht verbringst du neben den rauschenden Wellen Das erfährst du in diesem Beitrag über Taupo, Taumata und WellingtonTaupo liegt in der Waikato-Region, zentral in der Mitte der neuseeländischen Nordinsel. Von hier aus kannst du zahlreiche Touren und Aktivitäten starten und die Stadt eignet sich prima zum Shoppen und Bummeln.Der Lake Taupo ist mit 622 km² Wasseroberfläche der größte Kratersee Neuseelands. Er entstand durch einen Vulkanausbruch vor etwa 2.000 Jahren.Nach dem Tongariro Alpine Crossing haben wir die Nacht im Lake Taupo Holiday ResortNur etwa zwei Kilometer von Taupo entfernt sind die Huka Falls (Neuseelands meistbesuchte Sehenswürdigkeit) und die Craters of the Moon. Beides lohnt sich.Der Lake Taupo hat eine größere Fläche als Singapur.Etwa 250 km südöstlich von Taupo findest du den Ort mit dem längsten Ortsnamen der Welt. Abgekürzt heißt er Taumata.Von hier aus liegt Wellington noch einmal etwa 230 km südwestlich. Kurz vor der neuseeländischen Hauptstadt haben wir auf dem Wellington’s Kiwi Holiday Park übernachtet.Wellington vereint alternativen Lebensstil mit modernen Elementen. Du kannst, wenn du mit der Cable Car zum Planetarium fährst, die ganze Stadt von oben sehen.Geh unbedingt ins Te Papa Museum und lerne auf eindrucksvolle Weise ganz viel über Geschichte, Flora und Fauna Neuseelands.Iss in einem der zahlreichen Irish Pubs – wir waren im Jack Hackett’s Irisch Pub – und unbedingt auch im Capital Market. Das ist ein Food Court im Stadtzentrum, wo du Essen aus fast jedem Land findest.Nur zehn Minuten mit dem Auto von der Stadt entfernt bist du am offenen Meer. Verbringe unbedingt mindestens eine Nacht in der Owhiro Bay ohne Handynetz und schlafe beim Rauschen der Wellen ein.Wir haben die erste Nacht auf dem Platz des Evans Bay Marina Parks Das liegt recht zentral, du kommst mit dem Bus leicht ins Zentrum und wieder zurück. Wenn du abends die City erkunden oder ausgehen willst, ist das ideal.Fahr unbedingt mit der Cable Car hoch zum Planetarium und genieße den Blick über die ganze Stadt.Was du außerdem über Taupo, Taumata und Wellington wissen solltest:Direkt bei den Huka Falls findest du auch die Huka Honey Hive. Hier gibt es ganz viele Produkte aus eigens hergestelltem Honig. Natürlich Manuka Honey, Honigwein, Lotions mit dem Blütensaft und vieles mehr.Wir waren mehrmals in Taupo, weil es so zentral liegt. Neben dem Lake Taupo Holiday Resort* haben wir noch am Five Mile Bay Recreation Reserveübernachtet. Das liegt etwa zehn Minuten außerhalb der Stadt direkt am See. Auch die Parkbuchten am Riverside Park in Taupo können wir empfehlen.Am Lake Taupo kannst du außerdem Mountainbiken, Maori-Schnitzereien entdecken, Boots- und Kajaktouren machen etc. Hier findest du einige Inspirationen.Wenn du in Wellington mehr Zeit hast, besuche Museen, erkunde die Landschaft und die Natur und die Studios, in denen die „Herr der Ringe“-Trilogie gedreht wurde. Jill Dupleix grew up as the daughter of a sheep farmer and took an unusual route to becoming a food writer – it involved a phone book, a bike ride and a stint in the world of advertising. And meeting Terry Durack: “We hated each other on sight.” They not only married each other, they ended up reviewing restaurants together. Since those early days, she's written 16 cookbooks, been the editor of the Good Food Guide, food curator of TEDx and currently she's the co-director of the Australian Financial Review's program for Australia's Top Restaurants with Terry. It involves overseeing the Australia's Top 100 Restaurants list and ceremony and writing about the remarkable venues that get highlighted by these chef-voted awards. (There's one restaurant that lives up to the obsession with hyperlocal produce by making its plates from its actual surrounds.)  She talks about how the Australia's Top 100 Restaurants list is put together and what makes the highest-ranked establishments so special – from the neighbourhood charms of Tipo 00 to the special-occasion appeal of Brae, where even the temperature of the dishes will make an impression on you. Jill also covers the unusual espionage methods she resorted to while reviewing restaurants in the early 1980s (long before the iPhone – or  the luxurious ability to simply take a photo of the menu or the dishes you're eating – existed) and what she thinks the future of restaurant reviewing will look like. She also talks about the time one of her recipes inspired a mob to turn up at the ABC studios and the 17 Australian dishes you must try before you die – and what she would add to that life-changing list.
