Weltweit essen wir jährlich 170 Millionen Tonnen Fisch. Tendenz rasant steigend. Unsere Meere können da nicht mehr mithalten. Geht es so weiter, besteht die Gefahr, dass wir in rund 40 Jahren keinen Fisch mehr auf unseren Tellern haben werden. Nachhaltigkeit ist gefragt. Die Fischbestände nehmen rasant ab. Viele Gewässer sind bereits ausgefischt oder werden überfischt. In 40 Jahren keine Fische mehr? Steigt der Fischkonsum weiter an, soll es laut einer Studie in rund 40 Jahren keine Fische mehr auf unseren Tellern geben. Wir Konsumenten und Konsumentinnen können entgegenwirken, indem wir bewusst Fisch kaufen und essen. Das heisst: Umweltorganisationen raten, weniger Fisch zu essen, nämlich nur noch zwei Mal im Monat. Beim Einkaufen: Trotz Kritik an den verschiedenen Labels gilt beim Fisch-Kauf: Besser mit Label als ohne! Bevorzugen sollte man einheimische Fische aus Wildfang. Bei Zuchtfisch empfiehlt sich das Bio-Label. Ebenfalls vertretbar ist das ASC-Label. Bei Wildfang sollte man auf das MSC-Label achten. Auch dieses Label ist nicht über alle Zweifel erhaben, ist aber laut WWF am ehesten vertretbar. Zuchtfisch ist nicht nachhaltiger Auf den ersten Blick mögen Fischzuchten für Nachhaltigkeit sorgen. Die Realität sieht aber anders aus: Zuchtfische werden nämlich mit Fischen aus dem Meer gefüttert. Und zwar nicht zu knapp: Für ein Kilo Zuchtfisch braucht es bis zu vier Kilo Futterfisch aus dem Meer. Hinzu kommt, dass die Fische in den Zuchtgewässern mit Medikamenten – unter anderem mit Antibiotika – gefüttert werden. Ebenfalls steht die enge Tierhaltung in der Kritik. Fische aus Wildfang sind daher zu bevorzugen. Allerdings muss dort darauf geachtet werden, dass die Tiere artgerecht gefangen wurden. Schleppnetze und Fangleinen sind eine Quälerei für die Fische. Nur der Karpfen ist ökologisch bedenkenlos Nachhaltig Fisch kaufen ist also gar nicht so einfach. Aber: Es gibt einen Fisch, bei dem man nichts falsch machen kann. Der Karpfen. Er ist bei uns nicht sehr beliebt, weil er viele Gräte hat, und er soll etwas modrig schmecken. Der modrige Geschmack verschwindet aber, wenn man den Karpfen ausreichend wässert. At the peak of drag performance being criminalized across the country, the downtown clothing store Wildfang has partnered with the iconic Darcelle XV Showplace to break a Guinness World Record for the longest drag artist stage show. Kicking off on Monday, the event is also raising $250k for LGBTQ+ youth. So today on City Cast Portland, host Claudia Meza talks with Kevin Cook or, as he's better known, Poison Waters. She's been working at the legendary Darcelle XV Showplace for over 30 years. And since reigning queen Darcelle XV, and world record holder of oldest working drag queen, passed away earlier this year at 92, Poison became the official host. Als Jenny von Sperber Fritz zum ersten Mal begegnet, lässt der Gorilla sie nicht aus den Augen. Er ist damals schon über 50 Jahre alt, aber immer noch sehr charismatisch. Für die Journalistin ist klar: Sie will alles über das Leben von Fritz herausfinden. Geboren 1963, kam er 1966 als Wildfang von Kamerun nach Deutschland. Zu dieser Zeit waren Menschenaffen in Europa noch Seltenheiten, mussten mit Löffeln essen und bekamen Hammelfleisch zu Mittag. Als der Handel mit wilden Gorillas endlich verboten wurde, war Fritz schon mehrfacher Vater. Diese faszinierende Gorilla-Familiensaga erzählt nicht nur das bewegte Leben von Fritz, sondern zeigt auch die Entwicklung in europäischen Zoos im Umgang mit Menschenaffen auf. Sicher ist heute vieles deutlich besser geworden. Doch es bleiben Fragen, zum Beispiel, was es mit uns Menschen macht, wenn wir unsere nächsten Verwandten hinter Glas bestaunen. Und: Ist es überhaupt noch zeitgemäß, Menschenaffen einzusperren. Jenny von Sperber, geboren 1979 in Essen, ist freie Wissenschaftsjournalistin für Radio und Fernsehen und lebt in München. Sie veröffentlicht vor allem im Bayerischen Fernsehen, arte, 3sat sowie Bayern2 und Deutschlandfunk. "2020 ein Jahr zum Vergessen!" oder "Nein, das Jahr 2020 war nicht nur schlecht!" Auf jeden Fall kam in diesem Jahr alles anders als gedacht und jeder hat dazu seine ganz eigene Meinung. Das gilt auch für meinen Gast David Pohle, Chefredakteur und Verleger des Magazins DER HAMBURGER, und Überraschungsbesucher Stefan Fäth vom Restaurant Jellyfish. Wir plaudern darüber, wie wir das Jahr 2020 erlebt haben und wagen einen vorsichtigen Ausblick auf das neue Jahr. Wir sprechen aber auch über persönliche Eindrücke, über kulinarische Highlights und über die vielen Interviews, die der FOODTALKER mit so unterschiedlichen wie spannenden Gesprächspartner geführt hat. Es gab sie also: positive Highlights und Erlebnisse und darüber sprechen wir. Dazu gehört auch der positive Trend zu mehr Regionalität und Saisonalität in der Ernährung und das Engagement vieler Köche, Restaurants und Produzenten, gute Produkte noch weiter in den Vordergrund zu stellen, was sich sogar - bedingt durch die Krise in diesem Jahr - noch weiter verstärkt hat. Aber natürlich hat die Pandemie negative und weitreichende Auswirkungen auf unsere Gesellschaft und so auch ganz besonders auf die Gastronomie, die von den Lockdowns ganz besonders hart getroffen war und ist. Doch hat diese Situation bei vielen Gastronomen auch weitergehende Kreativität und Ernergie freigesetzt. So entstanden neue Take-Away Angebote, Lieferservices, Gourmet-Boxen, Gutschein-Aktionen, die von den Gästen unterstützend und dankend angenommen wurden. Pia* schreibt: *Liebes Team vom Familienrat, ich starte einen meiner letzten Versuche und schreibe euch – ich bin verzweifelt. Wir haben zwei riesig gewünschte Wunschkinder: Anton* 4,5 Jahre und Dinah* 2 Jahre alt. Unser Sohn war schon immer ein kleiner Wildfang, sehr autark, kreativ, willensstark, impulsiv und unausgeglichen. Als Dinah* kam, entstand keine idyllisch harmonische 4er Familie... wir hatten das nicht erwartet, aber das Aufbäumen seinerseits war intensiv - und das trotz aller umgesetzten angelesenen Tipps wie Einbeziehen, Exklusivzeit mit Mama usw. Bereits im Babyjahr hatten wir eine schwere kräftezehrende, lange Zeit und nun wieder. Wegen Corona waren wir sechs Wochen zu viert daheim – wir Eltern beide im Home-Office. Wir haben uns ins Zeug gelegt, gebastelt, gebacken, sind viel in den Wald gegangen – sicher war die Stimmung angespannt wegen dem Arbeitsdruck trotz Kinderbetreuung, aber ich bin überzeugt, dass es den Kindern nicht schlecht ging. Für beide war es gefühlt ein Traum so lange fern der Kita zu bleiben. Aber Anton* wurde mit den Wochen wieder "angriffslustiger"... seine Aggressionen zeigen sich zum Einen im Überreagieren bei Konflikten, allerdings auch – und das ist das größte Problem für mich – im Traktieren ganz nebenbei, just for fun, wie es scheint. Mehrfach am Tag rutscht er in eine Stimmung, er wirkt dann fast ein bisschen gelangweilt und als ob er einen kleinen Kick bräuchte, grinst und drangsaliert Dinah*... oder uns Eltern. Ich weiß nicht, warum er das tut und ich weiß auch nicht, was wir dagegen tun können. Ich bin erschöpft davon, jede Sekunde bei den beiden bleiben zu müssen, weil Anton* sie sonst im erstbesten Moment attackiert und sie weint. Ich weiß, dass man nicht strafen soll, sondern in Kontakt zum Kind treten soll. Die Gespräche enden aber im sinnlosen Nirgendwo, es ist nichts aus ihm heraus zu kriegen, weder seine Motivation, noch was er braucht, was ihm fehlt, was ich tun kann, damit wir friedlicher leben. Was ich von ihm verlange (keine Gewalt gegen die Familie), interessiert ihn nicht und setzt er auch nicht um. He started Dj'ing with a good friend together and played mostly hip hop, funk and other genres around these grooves. Soon due to the influence of his label partner and friend Jonas Saalbach, "GUZY“ was introduced to Electronic music, he immediately fell in love with it and puts the Passion he has for this Genre into his productions and sets. Guzy has refined his sound over the years but his love for deep house and Melodic Techno never changed. 2017 was the year when his first Collaboration came out as a Co-Production with Foreign Guest on the "Morva Ep" it appeared on Under Your Skin Records and has over 150.000 plays on Spotify alone. After this he is focusing more and more on own releases, there is a lot to expect for the future. In 2018 he released two Tracks on the Swiss label Wildfang Music. Larissa Loden is a jewelry designer whose line is now sold in more than 800 stores nationwide including high profile names like Modcloth, WildFang and the Smithsonian Museum. And only four years ago, jewelry was a side hustle to her day job as an art teacher in the Minneapolis public schools. Loden grew up in retail—her parents own a gift store in upstate New York and she knew didn’t want to go into the business. Making jewelry was simply a hobby in the quiet hours after teaching. But as the necklaces piled up, her entrepreneurial instinct kicked in and she began to sell—first on Etsy, then at pop-up markets, and when she went to her first trade show, the orders from gift stores and museum shops began pouring in. Today, she manages a growing team of 9 full-time and 15 contract employees and balances the growing demands of a creative profession with the details of running a successful business. “The past two years I’ve really tried to level myself up,” Loden says. “Creating something from nothing keeps you on your toes, but I love the exhilaration of it.” Loden talks about why she still sells at pop-up events, how she’s able to keep her average price below $50, and her decision to be a brand that stands for something–even at risk of alienating potential customers. After our conversation with Loden, we go Back to the Classroom with the University of St. Thomas Opus College of Business. Professor David Deeds, the Schulze Endowed Chair in Entrepreneurship, talks about the transition from artist to entrepreneur. “You start off as the designer or the chef or whatever it is – the skill that gets it all started. But you eventually become a manager, so you have to build the skills.”

We interrupt your week for this... Earlier this week, Wildfang reposted a photo of our lovely friend Kelton Wright in a sweet floral pantsuit riding her bike in some baller Oakley's. That alone was super cool, but then we got word that none other than Phoebe Robinson of 2 Dope Queens hit like on that photo!
